I was motivated after reading so many recipes here- now cant remember what they were!!! Any ideas?
It's used in the Fronch Toast recipe from VWAV - I've simplified that one to this:
1 cup vanilla soy milk
2 TBS cornstarch
1/4 cup garbanzo flour
Mix and dip bread slices into the batter, cook as you would any french toast.
I also use it in Zucchini pancakes- need to tweak that recipe before I'll post it, though, and as one of the flours I use for gluten-free cakes.
Oh, and if you aren't avoiding fatty foods, it's the main ingredient in pakora batter. Mmm... pakora. Too bad I get sick if I eat fried foods.
As an aside, you probably don't want to taste batters with garbanzo flour in them raw - it tastes disgusting. The overwhelming beany flavor goes away once it is cooked.
