i'm transitioning back into vegetarian with the idea of cooking mostly vegan. the little i do cook now is vegan, but the problem is i've checked out a couple of cookbooks from the library and they feel so overwhelming. i'm looking into cooking classes because i learn best hands on, but in the meantime does anyone know of any vegan blogs that break down what someone is eating daily? i feel like this would be really helpful! i need more variety/ideas...and i like meals with simple ingredients, i.e. my favorite dishes are grated carrot in olive oil homemade sauce...same with grated cabbage, sliced cucumbers, etc. i'm open to raw vegan blog recommendations of the same kind, which give a peak into what someone is eating daily to make it work.
