What are some good resources to get started?  2 out of 3 of my children barely eat meat as it is, I have to eat *some* meat to a problem with absorption with non-heme sources of iron, but 1 serving in a week of a quality iron source like liver could fill that need.  My husband will likely never give up meat, but I would like him to drastically cut down.

 

Any good resources with ideas for meal plans?  I would also like to eat as in tune with the seasons as possible.

There's usually a great "what's for dinner" thread going on here in this forum, where people share their dinner plans. Here are some of my favorite autumn dinners:

 

White bean soup with kale, lemon, garlic and sage, bread

Black bean and butternut squash chili, cornbread

Pumpkin curry and quinoa

Black bean-sweet potato enchilada mole casserole

Butternut squash ravioli with cashew alfredo

Spaghetti pomodoro

Edamame LoMein

Would cooking in cast iron help your iron issue?

 

I've been a vegetarian so long I don't know how to get started. I agree with Catnip, look through the threads here for ideas. Also, google for recipes with ingredients you like. For example "vegetarian broccoli recipes" and see what you get.

Created an instant family (7/89 and 5/91) in 1997. Made a baby boy 12/05 adopted a baby girl 8/08. Ask me about tandem adoptive nursing. Now living as gluten, dairy, cane sugar, and tomato free vegetarians. Homeschooling and loving it.

That book looks great!  I don't think cooking in cast iron would be enough for iron, honestly.  Even with eating meat my iron is very low.

 

I am going to check out the dinner thread as well :)
