Ok my subject line aint the best.. i have started this thread so we can help new vegetarians and vegans find easy recipe sources on the web or recommend must have cooking books that we have come across...

My favorite recipie book is Vegan Mediterranean. It's by this amazing woman who went travelling all over the area looking for *authentically-vegan* recipies! This means dishes the people in those countries automatically make vegan. So everything tastes like its supposed to and there aren't any wierd substitutions. One highlight is that they are from all around the Mediterranean, so a lot of countries are covered and there is quite a variety of flavors. She includes varieties and suggestions for menus. The recipies are really easy to follow and we've hardly had to do any altering of cooking times, etc. Lots of desserts, too, like making your own fruit sorbets!

Some of my favorites:
Egyptian Lentil Soup (big favorite in my family, and not just with the vegans)
Poor Man's Pesto - we use pumpkin seeds instead of pinola nuts for the EFAs (omega 3 and 6)
Great salads, too.

There's also the "Vegetarian Meat and potato lover's cookbook" - things like Shepherd's Pie!
