I find a lot of the really tasty and healthy recipes that are both V+GF take a long time to prepare or are easy for me to mess up. Plus, we spend a lot of time out of the house. Looking for any and all ideas! Links to Web sites are great, as is anything involving a crock pot.

Veggie red lentil curry over quinoa or rice
Bean soup made in a crock pot and GF drop biscuits
Shepherd's pie made with lentil-nut mix in place of meat

Red lentil soup with spinach and lemon - really easy and good
Veg pasta e fagioli soup. I have had this bookmarked to try for a while - looks so good and easy. Just skip the macaroni and parmesan, or sub rice noodles and nutritional yeast.
Another one I've been meaning to try - Honey-baked lentils:
Sweet potato-black bean enchiladas. I make this quicker by using prepared green salsa for the sauce. If you don't have time to bake, just heat corn tortillas and use this as taco filling.
Sweet chili lime tofu. I simplify by serving with plain rice or quinoa & using any greens I have available. I usually omit the mint, too. It's really the sauce that makes the dish.
Crock pot - veg chili! My favorite is Rae's Vegetarian Chili from Allrecipes.com

-quinoa salad with cucumbers and tomatoes is one of my favorite go-to meals. i also make israeli couscous (not gf) fruit salads, so maybe something along those lines without the gluten.
