Oh I never combined cauliflower with leek, that sounds yummy! Do you have a specific recipe or what's your ratio for those vegs? I might have to try that soon!

i got the idea from the newest edition of sunset magazine, it's not a vegetarian recipe in there, but i like to use recipes as ideas, not guides or follow-by's.
i also made red velvet cupcakes tonight with beets (from sunset) but made them vegan!

My cauliflower looked a bit *puny* so I left out the 2 cups of water and I'm glad I did...it would have been too watery. But otherwise, the flavor was good and DH loved it. Always a good thing! Oh, and I also forgot to buy white wine so I left it out. But I think it's worth adding though if you have some around.

Tonight I changed plans around and we had spring rolls, baked tofu, white sticky rice and broccoli stir fry with onions in a mix of Hoisin sauce, mirin and rice vinegar.
Tomorrow I plan on making Isa's Split Pea soup from 'Appetite for reduction'.
i'm planning out my vegan cupcakes for the month. mmmm

Ugh, sorry, totally slacked in posting again! These past days I pretty much just threw together what came to my mind spontaneously... I'm trying to cook from McDougall's Quick & Easy cookbook right now, just because I'm trying to go a bit more low fat.. which didn't hinder me from baking a batch of chocolate chip cookies from 'The Joy of vegan baking' today! LOL (Ugh, already 1 cookie comes out to 170 calories, holy moly! Before I did the calculations I already devoured 2, yikes! I immediately walked another mile with Leslie Sansone, thinking I've walked off at least almost 1 cookie at least that way!

Anyway, I've written down some meals from the book for this coming week, I'll just have to make it final which one is for which day.. Hubby's been working these past 2 nights so yesterday I made 'breakfast for dinner' for the kids with pancakes and tonight they just had some pasta while I had some rye bread with mock tuna, a green salad and 4 carrots.
I feel a lot better without the dairy and gluten. I've never loved eggs so I def don't miss them. I did have some slips on Thanksgiving...and paid dearly for days after. Brutal. SO NOT WORTH IT
I haven't found a cost hit YET. But I also haven't bought any different pastas or such. Just rice noodles for stirfry and such which we bought anyways
I've been eating A LOT of sauteed kale salads with nuts/seeds and such
That's good that you're feeling so much better and haven't experienced a big bump in the wallet for going gluten-free!
I just thought because of the recipes I've read all requesting all those different flours and stuff and when I looked last time at the store how much those things were, holy moly, I was just glad I didn't need to go that route! LOL
These past 2 nights we had 'chik'n' noodle soup with fresh home made rye bread and tonight we'll have roasted bell pepper potato soup and a big green salad. Originally I planned on making the dish as a 'paprikash' with the potatoes in the pressure cooker, but it turned out too liquid-y, so I turned it into soup! Good thing we all love soup here!
I still got ~5 big zucchinis and 2 big red bell peppers here with which I'll need to figure out what to make... I also have a big portion of cooked quinoa in my fridge.. Not sure yet if I'll attempt to make some bean burgers with it or what... (We sometimes just eat it with almond or soy milk for breakfast.)
Last night I made an Indian style potato and okra dish. I had an open bag of okra in the freezer that I wanted to use up. DH was out of town so I just heated up some whole wheat naan for me; will make some raita to serve with the leftovers tonight.
DS had soccer last night so I needed to feed him quickly while I was prepping the curry. He had a cheese and tomato quick quesadilla, baby carrots, and a pear.
I always forget to post here and still suck with planning my meals in advance!
I've been cooking a few dishes from Kathy Hester's "The vegan slow cooker"; some success, some failure.. The 'Mix & Match Jambalaya' (Sunday) was ok but no big rave.., the 'Sweet Potato White Bean soup' (Monday) was an epic fail!
Not sure what went wrong.. I followed the recipe to a 'T' and my family didn't like it! *sigh* It was a tad too watery for my taste as well and I would have made a few things differently myself.. What else... Oh yeah, I've tried the 'Chick'n seitan' (past weekend)... meh, still not a fan of Seitan! The only thing that was accepted by my DD was when I turned some of the 'cutlets' into breaded 'nuggets', but still not with big rave, so I won't make it again!..
Yesterday we had some pasta with a creamy tofu 'dressing' to go over, combined with some sauteed zucchini strips, onion and small tomatoes. I also made Lindsay's (Happy Herbivore) crustless pumpkin pie and some coconut 'whipped cream'. OMG, it was sooo good!!!
Tonight we'll have potato leek soup with home made sour dough dinner rolls.
Ugh, these past days were again just an go-by-ear thing.. We had a big green salad w/eggplant 'bacon' (Isa's recipe from AFR) and baked tofu twice in a row; mainly because DH brought 2 huge heads of lettuce from the market the other day and I have NO space in our tiny (European) fridge!..
Breakfast for dinner is something the kids love, so we had that as well a few times during the past weeks...
Today we'll have baked potato wedges, green beans, chick'n nuggets and some more green salad on the side.
Tomorrow I'm thinking of making a black bean/sweet potato casserole or make them as quesadillas...
I'm going to try and bust out some homemade veggie pizzas tomorrow, we canned some great tomato sauce this month. The kids like broccoli if it is on pizza
Last night was maple roasted butternut squash and Brussels sprouts. Served along quinoa tossed with toasted pecans and dried cranberries. I made a dressing for the quinoa with olive oil, maple syrup, lemon juice, and grainy mustard. Very seasonal and yummy!
I made a potato and parsnip soup with sage the other day, it was fantastic... I simply mixed potato with parsnip, sage, water and a little bit of almond milk, salt and pepper, and let it cook for 30 minutes, it was delicious!

Last night was an improv stir-fry. Cooked some brown rice in veggie broth. Sauteed garlic, ginger, broccoli, and cauliflower and then added a half a cup of veggie broth, few dashes of soy sauce, glug of rice wine vinegar, and thickened with a bit of corn starch. Not too shabby!
Tonight we had my favorite: Potato, kale, sausage and white bean soup YUM!!
