We love hummus in our house.  It's a go-to snack and I often make hummus sandwiches for my son's lunch because we're not supposed to send peanut butter stuff to his day care.  I make a ton of stuff from scratch, but unfortunately whenever I try to make homemade hummus, I don't like it as much as the store bought kind!  I've tried several recipes.  In general I find homemade hummus to be thicker and more garlicky than I like.  I have tried altering ingredient amounts but have never come up with the magic formula!  Do any of you have a hummus recipe or tips to make homemade hummus that tastes like Sabra or Tribe brand?  I would like to save some money and not buy so many little plastic containers.  Ideally I would be using dried chickpeas, cooking them in the crockpot, then making the hummus.  I have plenty of kitchen tools/gadgets available.  Thanks!

We really like the recipe from Cook's Illustrated. It's more restaurant style, though. I find it creamier that store bought. I'll check around for an online source or post the recipe later.

Yup, that's it. Let me know how you like it. I usually skip the garlic and cayenne for my 3 year old, but it's still pretty good.

15-30 cloves garlic, minced
1 onion minced
*sautee onions and garlic in olive oil/water

1 can chickpeas
3/4 cup tahini
1/2 cup lemon juice
3 Tbsp cayenne hot sauce (we use Weston Brand for the tang)
1 1/2 Tbsp Braggs/soy sauce
1 tsp cumin
1 tsp cayenne
1/4 cup dried parsley
*put all ingredients (including sauteed onions and garlic) into a food processor and blend until smooth.

I adapted this to taste from the cook book "How It All Vegan". It is fantastic and I take it everywhere with me. You can play with the spices as you like, but don't be afraid of the garlic because cooking it with the onions makes it sweet smile.gif

1 15.5oz can of chickpeas (drained/rinsed)
2 Tbs Tahini
3 Tbs Lemon Juice
1 Garlic Clove
Salt to taste
Water to desired thickness

Process all ingredients in food processor until smooth. Enjoy!

Soak overnight and then drain and dry completely. Then cover the chickpeas in a bowl with cheese cloth and leave for the whole day and overnight again, the longer the better as this will sprout the gabonzos. Makes the nutrients better. smile.gif Then cook until very tender. Also, if you can peel the shells off. It is very easy if they have been cooked for long enough. This takes time but it really makes the consistency great andvery worth it!

my fave:

 

1 can of chickpeas (rinsed)

4 tbsp lemon juice

2 cloves (or more!) garlic

1/2 tsp toasted sesame oil

1/2 tsp salt

pepper to taste
