We're not vegan, but dd is allergic to eggs and milk. I would like some kind of hearty bread, like with sunflower seeds, or flaxseeds, something along those lines.

I've made some great vegan bread in our machine, but it's been a while.

Do you have the recipe book that came with the machine? Instead of milk use soy or rice milk. The recipes I'm remembering didn't call for eggs.

At some point I can add raisins and cinnamon.

Also at the same point you could add sunflower seeds or oats even. Now I'm hungry for some fresh bread.

I was wondering if I could substitute rice or soy milk, I wasn't sure if it would work. Yeah, it's making me hungry too.

Definitely can substitute. I haven't found a recipe yet where subbing rice or soy milk made it taste different, but then again, it's been 6 years since I've had cow's milk so maybe I'm not remembering correctly.
