I am trying to come up with about a week's worth of freezer meals for after the new baby comes in a few weeks! I don't know if it is pg brain or what, I cannot think of a single thing to make and feeze, aside from lasagne! Anyone have any good veggie freezer meals??? I have been racking my brain!

Thanks so much for any ideas!

Dal freezes well, with or without rice, and there are a ton of recipes online.

Soups--I have a recipe for black bean and lime chili that is FABULOUS. Lentil soup freezes well, too.

No chicken pot pies--the filling freezes well, though I've never frozen one all put together. You can buy them that way, though, so I have to assume it's do-able.

Cheese enchiladas (though that's fairly similar to lasagna, really).

Spring rolls freeze beautifully--there's a recipe in Deborah Madison's Vegetarian Cooking for Everyone that has enough stuff in it to be a meal, IMO.

Fried rice dishes
Breakfast casserole (torn bread, cheese, onion, mushrooms, eggs poured over the top, then bake)
Peanut thai noodles
Stuffed peppers and/or cabbage rolls (you can make them meatless, just rice/tomato sauce/bit of egg to hold together)

Chilaquilla (black bean torilla casserole)
Spinach, corn, and goat cheese enchiladas
Potato and sweet potatoe enchiladas
Potato and mole enchiladas
Picodillo (made with sweet potatoes, white potatoes, and/or squash
instead of meat)
Red Beans and rice (rice separate container)
Black Bean chili
Spagehtti sauce

These are our few stables for late work nights, all vegetarian.

Thanks so much I have never frozen rice and I wan't sure howe that would be - rice is such a staple in our diet that I am glad to here it works well frozen!

These are AWESOME! just made a batch a few days ago. I always use black beans instead of kidneys, though. We prefer them.

pizza (make up & freeze the dough, freeze portions of the sauce, freeze portions of the toppings, package them into pizza kits)
