last night was grilled cheese (ezekial bread, raw cheese & earth balance) and imagine brand tomato basil soup. fyi, that soup is nasty! blech.

Last night, I made veggie pockets. They're very easy. I use thawed premade rolls and roll two of them out with wheat flour. Then just fill, wet the edges, fold, and bake at 400 for 20 minutes. The filling I use is a large package of mixed veggies, a carton of sour cream, two bags of shredded cheese, and two thawed packages of spinach. If you've got the stuff thawed beforehand, it doesn't take long at all. It's good with an egg wash on top, too. With vegan dough, it's easy to take out the animal ingredients.

I know! I thought it was awful too. We now keep Pacific Foods' tomato soup on hand for emergencies now. It comes in the same kind of carton, but is WAY better, IMO.

Last night was Eggplant parmesan, without the cheese. So actually, Eggplant non-parmesan. lol. But I breaded it and baked it, and topped it with spaghetti sauce.

Tonight is Kale stirfry, with tofu. It really is yummy! Dp loves it

And the other night we had Green Beans Almondine as a side dish- yummy!!!

A couple of recent meals:

Homemade pizza with sweet onions, spicy peppers, spinach, and Italian soysage

Tofu tacos, fava beans, corn on the cob, black beans

Tomorrow is a butternut squash and pasta casserole, probably with salad and maybe some summer squash or sauteed greens.

Last night was sauteed bell peppers (red, yellow and orange) and onion in a whole wheat flat bread wrap. Mmm...

Tonight was a huge slice of non-cheese cheesecake (made with non-fat organic yogurt instead).

Some other recent meals:
Split pea soup made in crock pot....
cheese ravioli with marinara sauce...
veggie and cheese lasagna
Rice with seasoned red beans


We also have "veggie nights" some nights--cor on the cob, steamed garlic carrots, fresh broccoli to dip, 3 bean salad....whatever was left over from the week or looked good in the produce aisle.

We had my favorite quinoa dish.

I cook the quinoa in chicken broth and add some cumin, boil miniature potatos (and then fry them a bit) and cook sliced chicken on the side. When the quinoa is done, I add some frozen peas, put the lid on and leave it for 5 minutes, add the potatos and chicken and eat it.
Nice and filling.

tonight dh made vegan fondue. He used a couple recipes from the Uncheese cookbook, mixing and matching by what ingredients we had. I think it was a base of pureed oatmeal, with tahini, yeast, garlic granules, some beer. We dipped steamed broccoli, potatoes, and carrots; stale bread cubes, sauteed cubes of steamed tempeh.

I just use the recipe from "How it all vegan" tastes just like Tofutti. If you don't have it I'll be more then happy to post it, let me know.

I lied I just started roasted veggie soup for dinner (a friends recipe). Right now I'm roasting carrots, yams, turnips, onions, garlic, and acorn squash in olive oil and white wine. When they are nicely browned I'll put them in the soup pot with veggie stock, salt, pepper, more garlic and fresh herbs (probably rosemary and sage since thats what I have the most of). After a little while I'll add leftover brown rice. Yummmmm...

Last night we had some bean soup that got overcooked, plus some sauteed turnip greens. The soup wasn't great, so tonight I resoupified it with lots of water, veg broth, a bay leaf, some zattar, a tiny bit of rosemary, and I tossed in the leftover greens plus some other leftover broccoli, green beans, and some leftover rice pilaf with red peppers. And I made some cornbread. It was really good.
