I love hearing what everyone is having for dinner, and I get great ideas, so I thought we could start one in this forum.

Last night I made marinated veggie kabobs (dh's had some beef but mine had tofu). I think next time I would make them without the tofu though and just have the veggies.

Tonight we are having eggplant parmegan. I've never had it before so I'm hoping it tastes good!!! I think with it I'm going to make sundried tomato couscous and a green salad.

Last night I made baked egg roll and chinese style veggies and rice.

I have no idea what I'll make tonight. Really I just wish we had the money to eat out, I don't feel like cooking. It's hot in my kitchen and my feet and ankles swell. Opps sorry for the whine.

OUR DAUGHTERS ARE PROTECTED SHOULDN'T OUR SONS BE TOO! :

last night was spaghetti w/ sauce and n.y. and some of my italian-y fried tofu with a side of homemade hearty nut bread.

am feeling highly unmotivated today so not sure what today's dinner will be

Last night we had steamed quinoa, and a thai yellow curry with chickpeas and veggies fresh from our garden! It was so good- just ate leftovers for lunch.

Tonight we are having fresh greens salad with anasazi beans, salsa, shredded raw cheddar, snow peas, beets, artichokes and summer squash- all the produce is fresh from our garden except the artichokes which are out of my co-worker's garden. White balsamic vinagrette with flax and olive oil. On the side- homemade whole grain bread and butter.

Now I am hungry!

Ok so I made eggplant parmegan tonight for dinner and OMG I am in love!!!!!!! This stuff was soooooooooooooooo good. Austin ate a whole plate of it too!! DH loved it! I cooked up some spaghetti and put it overtop. YUM, I can't wait until lunch time tommorow

Wow - we're such diverse cooks and it all sounds so healthy AND delicious!

It's also too hot here to do much cooking.

Last night we made vegan quesadillas (WW tortillas for me, white for DH, caramelized onion and fresh organic corn filling, refried pinto beans, Vegan Gourmet cheese) with homemade guacamole and locally made salsa. I also made Mojitos (soda water, agave nectar, fresh spearmint leaves, lime juice, and rum).

The night before, I did baked Mac n Cheese and huge salads (romaine, heirloom tomato, avocado, endive, red onion, spinach).

Tonight I was really tired and DH had lots of work so we had a lazy supper. I made 2 quesadillas for myself with the leftovers from last night and he had a sandwich with baked tofu, romaine, and red onion on a fresh french roll with vegenaise.

Tomorrow, we're going to make some Pho (Vietnamese soup) as part of this vegan cookalong I'm part of.

my lazy dinner was brown rice mixed with some "chicken" strips, portabello mushrooms, peas and broccoli. it was good!

OMG we go through the same freaking thing. Except we do peas not green beans. I swear it is all that kid want to eat. I give it to him for lunch everyday and you'd think that would be enough.

Isosmom- That millet stuffed zucchini sounds so good!! We have tons of zukes at the moment. Did you use a recipe or just throw it together? My kids love millet, but are ambivalent about cooked zucchini- so I am thinking maybe they would go for it.

Actually pretty much everything on this list is making me hungry.

There is a recurring theme to our meals- we are frantically eating our garden produce. We had whole grain pasta elbows with summer squash, garlic tops, artichoke hearts, shelled peas, assorted herbs, and a white balsamic vinagrette made with flax and olive oil. Topped with a sprinkle of raw milk parmesan. Plus fresh raspberries.

Tonight- fresh baby greens with balsamic vinagrette topped with lentil and bulgar salad (this salad comes out a lot like tabbouleh plus lentils). We will probably have more raspberries too, since DH and the kids picked two flats worth yesterday

I made pan fried tofu (I lightly bread it with seasoned flour/nutritional yeast), rice & gravy (Yum, such a comfort food), corn on the cob and salad.

Reading this thread always makes me hungry and want to eat dinner at everyone's houses.

tonight will probably be take-out of some sort, as i'm working 4-8pm and there's nothing for me to cook and leave for them to eat (and DH can't cook to save his life).

Last night i made Cathe's lentil dahl, and the spicy indian rice from VWAV- OMG, that rice is to die for! Soooo delicious! I had it for lunch again today- it's a meal in itself! Then for dinner tonight, I made rice w/ coconut milk, chopped up kale from our garden, and some garlic with the lentils that I had left over (I made a double batch).

I am really getting overwhelmed w/ the cooking and the resultant kitchen mess. i had to buy some more instant type meals from Trader Joe's. I hate to spend $ on food I could easily make from scratch but I was really going insane from making every single meal and snack from scratch. I need something to make on days when I really don't have time or had a bad day and don't feel like cooking.

We tried this & it just burnt the crust & left the toppings raw...cheese melted but that was it... Oh well!

We have been eating out all week for various reasons, so my hope is to get back into the kitchen tonight. You guys are rockin my world! I love the ideas I got here! I bought stuff for enchilada caserole, eggplant parmesan, and corn chowder (I'm an idea stealer! )

I made the enchilada caserole last night...oh my yum. I should note that I am not a good cook and trying to learn being that one day my little guy will want to eat real food and I'd like to know how to cook it for him.

Today for lunch it was Swiss Cheese Onion soup. Yummm!!!

Dinner time is fun. DH is nightshift and I'm feeling lazy so it's pancakes and fruit, lol. Ohhh well.

two nights ago we had ww pasta with homeade (by dp) organic pesto and cherry tomatoes, with a side of sourdough bread drzzled with balsamic vinegar and spread with goat cheese. it was AWESOME!

last night was take-out veggie sushi and summer rolls!!!!!

It is just so so hot here today. Just the idea of turning on the oven or the stove or even the grill makes me start sweating. It's a pizza night tonight! I've been working to have vegan dinners every night, but I just can't get it together today.
