Yesterday...

Breakfast: green tea, daily smoothie of fruit, almond butter, raw nibs, flax

Snack: 3 pumpkin muffins!!!

Lunch: minestrone soup, sprouted barley bread with hummus, steamed veggies, and an awesome coconut cupcake

Dinner: brown rice, coconut curried veggies and chickpeas, red leaf lettuce salad with raw pine nuts

For breakfast it was a smoothie made with almond milk, pomegranate juice, spinach, ground flax, nutritional yeast, frozen blueberries, banana, protein powder, cocoa. it was way better than it sounds.

Lunch was a huge salad with lettuce, cabbage, black beans, slivered almonds, artichoke hearts, with liquid aminos sesame ginger dressing.

Dinner should be tempeh saurkraut skillet with a cucumber parsley salad.

Ive had a few almonds, an apple, and a spoonful of dark chocolate peanut butter as well.

Mmmm, cupcakes. I was just fantasizing about cupcakes this morning - I'm making some for a special Valentine's Day treat but haven't decided which ones yet. Last time, I followed the advice in Vegan Cupcakes Take Over the World about running granular sugar through the food processor to get it more powdered, but my frosting turned out very crunchy (and I have a kick-butt food processor). So just last week, I found an organic powdered sugar in anticipation of the V-Day cupcakes.

hot (almond milk) chocolate (by the way, this dosen't work very well! my hot chocolate got all bitter and frothy with almond milk... works much better with rice or soy milk!)

two oranges and a mango this morning with coffee

around lunch i ate a handful of grapes, a small bowl of vegan alfredo noodles and steamed broccoli

for dinner we had my corned seitan (yes, it works!) and cabbage, along with boiled potatoes, onions and carrots and lots of spicy mustard and beet horseradish.

* I've never seen so much vegan food at a pot luck! I made the apple chowder and the hibiscus tisane. I had counted on only being able to eat my own stuff, but one mom after another brought vegan food (how cool is that considering I think they're all omnivores - the two vegans in the group besides me weren't here). When I heard the cookies were vegan: Yes! I asked that mom where she got the recipe, and she told me it was from the Post Punk Kitchen, so I looked it up just now. Perhaps I shouldn't have asked considering they were so delicious that I'm sure they wouldn't last long in this house. I think I've had quite enough sugar for the day now!

Sure! Here's the recipe I used. I can't credit, as I've had it on file for YEARS from some veggie community a long while back, and can't remember who gave it to me.

I'd use a bit less liquid next time; they were a bit messy to form into "scones" pre-baking. Tasted out good, but a bit muffin-y.

1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
2 teaspoon baking powder
1 teaspoon salt
1/2 cup sugar
1/2 cup margarine
zest of 1 lemon
1/2 cup frozen blueberries
1/2 cup soymilk

Preheat oven to 400 degrees. Prepare pan with a light spritz of oil .

Combine flour, baking soda, baking powder and salt. Mix well. Add sugar, lemon zest, margarine, blueberries and soy milk and stir just to combine (I like to use my hands).

Divide dough into six round pieces and place onto cookie sheet, flattening them a bit. Brush soy milk on tops of scones and sprinkle with sugar, if desired.

Bake for about 13-15 min. or until scones are a lightly browned on top.

breakfast: whole wheat toast with organic raspberry jam

lunch: a vegetarian burrito from taco time; hold the dairy, sub gaucamole.

dinner: tempeh "sausage" gravy & baking powder biscuits (VwithaV)


today...

breakfast and lunch (rolled into one): leftover tempeh gravy & biscuits

dinner: cumin-scented chipotle rice, grilled brussel sprouts

Mmmm... I've made those pumpkin cookies and they were soo good. I really like VwaV for cookies/pancakes/muffins...anyway...and thanks! Pixiexto for your recipe! I have all that stuff so I will probably do it tomorrow. I appreciate it!

Yesterday: Breakfast: Can't remember, toast, I think, and tea, always

Lunch: polenta (soft, not firm) with broccoli, grean beans, spinach, and tomato sauce, and lots of garlic, on top (leftovers from dinner night before)

Dinner: Lazy--packaged (but all-natural, at least!) noodles with Kung Pao
sauce, tofu, and aspargus (added the tofu and veggies)

Breakfast: a vanilla cupcake with vanilla-maple frosting, Irish Breakfast tea with soymilk--yes, a sugary breakfast, but so yummy!

Lunch-Tofu scramble with spinach and tomatoes, breakfast potatoes--making up for my crappy breakfast.
and a half of another cupcake.

That's it so far. I think more tea is in my near future...

I love getting ideas from this thread!

We are LOW LOW on food. I have been scanvenging. So this morning I had left over chili and rice.
Lunch I sauteed squash and frozen veggies for fajitas.
