It was a toss up here. It's just me and my 2 year old DD tonight. The choices were stroganoff or a pasta salad using sweet potato chunks and feta (among other things ). I finally decided on stroganoff since I know she'll eat that and because I it oh so much.

Dh & ds went to a baseball game so it was me all by my lonesome...

I was too lazy to make something for just me so I had a small salad and what dh calls my "vegetarian tv dinner"-Morningstar frozen veggie bites (broccoli & cheese).

Not what I wanted.

It was just me and 9 month ds tonight(dp is at a gig), I hate cooking just for me so I got veggie rolls from the grocery store(veggie sushi), and a fruit salad...

ds had black beans, cucumber, and a little bit of rice and yellow pepper.

then I had toast with a little maple syrup lol for a snack with an apple

I hate cooking for myself! It's no fun!

I ate mashed Yukon Gold potatoes with melted butter and caramelized onions, corn on the cob, and chocolate pudding with whipped cream. Ok, not all at once... but I still feel completely stuffed. Dd ate nothing because she fell asleep while I was cooking.

It was just ds and I again...ahh the lonely life of a musician's wife lol...I ate leftover rice and bean salad from a picnic we went on this afternoon, then had fruit salad for desert...BUT I did leave a message on dps phone for him to bring me home bean burritos from taco bell...gosh I love the taco bell!

Have him ask about their beans! We went there the other night cause I their crisp bean burritos and sure enough the only beans that arent refried were the ones in the 7-layer burrito and the ones on the nachos. I was so sad!

Tonight we had stir-fry. Kind of. It was a prepackaged stiry fry veggie mix (green beans, broccoli, carrots, red peppers, onions, muchrooms, and bamboo shoots) tossed with some egg noodles. DD had hers with soy sauce and I had mine with Italian dressing and feta cheese.

hmm...all we do is ask for everything turned bean and they're not refried...why is it bad if they are? or do you just not liked refried beans?

Refried beans are refried in beef lard. I refried beans but places like Taco Bell tend to use the beef lard version.

This and other sites on the web state that Taco Bell's refried beans are indeed vegan.

As for dinner tonight...Bbq Tofu sandwiches with caramelized onions, kale sauteed with onions with soy balsamic dressing, and baked beans.

No dh again tonight...

Ds and I had another whip together nothing fancy dinner.

Together we made sweet potato pancakes and had them with steamed veggies topped with cheese sauce & toasted bread crumbs.

I gotta get out of this rut and start making actual meals again!

They should tell their employees that!

ETA: I clicked your link and went to a link within that one...they don't specify their refried beans.just bean burrito. We were told the other night by the manager (only guy working ) that the beans they use for the 7layer are different than the ones in their bean burrito. So I'mm still not so sure about their beans. Conflicting info is everywhere!

My oldest teen ds has a teen friend who works at Taco Bell, and he says they absolutely use vegetable oil (it's cheaper, too). He said they want to sell their food to everyone! Their profit isnt what BK & MD's are, so they want to appeal to as many people as they can.

Anyway, I have *no* idea what is true, just that is what he told us.

Wow. That is so weird. Why, oh why would they use different beans in different burritos? : They need to run a big vegetarian ad campaign to straighten out what is veg and what isn't!

Tonight I made a lentil dahl..it was ok not the best thing ive made...and then we had perogies with garlic and chili sauce for snack

Dinner was soooo good tonight.

Sweet & Savory Baked Tofu
Roasted Radishes with Soy Sauce and Garlic Scapes
Coconut Rice

Yummy yummy yummy. I got a ton of radishes from my CSA, and I hate raw radishes, but roasted in peanut oil and tossed in sauce they become sublime! I sually throw in some scallions at the end with the soy sauce, but I had garlic scapes from the CSA instead and it was so delish!

It's leftover night. I have leftover mashed potatoes, ziti with tomato sauce and baked mac n' cheese. Hopefully b/t me, dd, and my father we'll eat it all. I'm also going to steam some veggies (broccoli, cauliflower, snow peas) to go with.

I actually "cooked" some real food tonight! Well.....sorta, LOL.

We had veggie fajitas and they were fantastico-I threw everything from the crisper in there tonight.

For dessert ds and I are making family smoothies-YUM.

Tonight was convenience night for me. I had too much going on and couldn't make a meal from scratch. So for dh and the kids it was cheese tortellini with jarred marinara sauce. Also sauteed broccoli. I had a whole grain wrap filled with leftover Spanish rice and broccoli.

We had a very simple but tasty dinner (just me and DD again). Grilled cheese sandwhiches with sour cream and tomato. I was going to make guacamole but my avocados weren't soft enough.

we had home made pizza with pesto, chicken breast, black olives, spinach, feta mozz. and provalone cheese. With a salad that consisted of spinach and strawberries splashed with balsamic vinagar. And more strawberries on the side!
