My oldest ds' 17 yr old hippie gf made us a lovely Mexican dinner with help from all of my kids. It was realy delish and wholesome. It wasn't veg, but it was all organic, and all pastured, and I was so touched they would cook for us like that. Awwww...sweet.

Yay- I am so glad I found this thread! I get so blah about thinking of dinners... I cook professionally so on my days off the LAST thing I want to do is figure out what to make for dinner. It usually results in pasta or cereal. You all have inspired me!

Last night we had "Asian Baked Tofu" (Candle Cafe Cookbook) over brown jasmine rice. The recipe says it's good mashed up and with sunflower sprouts in a sandwich - I may have to make it again for that purpose next week.

Thanks! I came out really yummy and I just finished up the last of it for lunch yesterday! I threw some jalepeno's on mine and it was sooo good!!

Tonight Im making a really thick veggie soup/stew. Baby red potatoes, zucchini, crookneck squash, celery, crushed tomatoes, carrots, simmered all day in yummy veggie stock! YUMMY! We'll have this with rolls...

last night was a onion/garlicky tomato sauce over ww pasta, salad, and some of that marinated tofu you can buy already done. I just fried it a bit in a pan. Yesterday was produce day and I wanted to do the enchanted broccoli forest, but was too pooped to cook that much by 6.

Last night I made an "oven-fried" eggplant parmesean that probably could be veganized easily by using NRG instead of egg beaters. It turned out SO good. Basically, slice the eggplant, dip the slices in egg, then in breadcrumbs that have been mixed with salt, garlic powder and Italian seasonings. Then lay on a sheet, bake at 400 for about 15 minutes, flip, bake for another 10, and served covered with good marinara sauce.

Tonight is Goddess pasta, goat cheese, garlic, local organic olive oil and balsamic, whole wheat pasta, garlic, and fresh herbs, zucchini, cherry tomatos and arugula from the garden.

A summery dinner for us tonight...we're having black bean burgers (I hope they turned out! Tried another new recipe today) and a cold pasta salad with onions, broccoli, cukes, mushrooms and cheese.

...now I just need to think of something sweet for dessert-perhaps I can talk ds into helping me make some monkey bread!

I made pasta with olive oil and garlic, asparagus, snow peas, avacado, parsly and vegan "parmesan" - it was yummy! Got the idea from an ad recipe in Vegetarian Times.

We had open faced grilled veggie sandwiches on semolina bread, with fresh mozzarella broiled on top. I made a white bean salad on the side, with red onions, chopped tomato, basil, lemon zest and olive oil.

Tomorrow night I have to do something with avocado...

I made baked tofu with brazed peppers and olives (from D. Madison's cookbook). This is probably the most ambitious recipie I've tried, and it turned out so good! It even looked pretty, so I had to have dh come look at it before I served it.

Tonight we are having cuban black beans, rice, and a salad. Maybe some sliced avocado & mango on the side if I feel like running out to the market.

But, I have mint in my container pots now and limes in the fridge so when DH gets home we're makin' mojitos!

I made pizza topped with ricotta, mozzerella, and parmesan cheeses and roasted red peppers. And a salad. Then- and I totally stole this idea from someone on this board so, thanks!!!- DD made blueberry and raspberry kabobs on toothpicks for dessert, which she loved doing. She was so proud of herself!

Last night, we had an early, casual dinner out at Panera where DD had a PBJ, (omnivore) DH had French onion soup in a sourdough bowl with whole grain baguette, and I had the vegetarian black bean soup with whole grain baguette.

As for tonight, it's still a few hours off, and I haven't decided yet. I made whole wheat pretzels an hour ago, so we may have those with dinner. I tried one, and it's pretty good with dijon-agave nectar dipping sauce.

We don't have any recipes picked out for the week (except for "sexy low-fat vanilla cupcakes w/ fresh berries" from Vegan Cupcakes Take Over the World), so we're just winging it with whatever we have on hand until I can get to the store again on Friday.

I made a big dinner, since the rain had me stuck in the house all day.

--Barilla "protein plus" pasta with homemade pasta sauce and sauteed veggies (onions, peppers, eggplant, spinach, basil)
--the "Big Easy Bread" from vegweb
--green salad
--chocolate Tofutti

I found these cool cherry tomatoes at the store this am (before the thunderstorm)...yellow and pear shaped. They were yummy

Hummus/veggie wraps in WW tortillas...

We just had our night time "sweet snack"-yogurt and home made granola. We tried a new recipe this weekend and it turned out sooo good that we're having granola steamers with vanilla soy for breakfast.

...And then maybe granola for much too...

last night was just a baked tofu lin sandwich made with sliced tomatoes, Follow Your Heart cheddar, nayonnaise, dijon mustard, all on toasted whole wheat bread. It was real yummy with the "cheese" melted (I broiled in the toaster oven)

dessert was a mango Edensoy banana smoothie
