uses for breadcrumbs - Mothering Forums

I've recently started saving my breadcrusts and make them into crumbs. The problem is, I don't know what to use them for. WE eat mostly vegetarian and most breadcrumb use I see is for deep frying meat! Can they be used as some sort of filling for something? Thanks

I don't have a recipe but maybe use for stuffing peppers?
Or you can mix the crumbs with some seasoning and coat eggplant then fry it up in a skillet or bake it. I love fried eggplant!

Top casseroles (like mac and cheese)
use in patties (eggplant, bean burgers, other veggie burgers) as a filler/binder
Use in the stuffing for stuffed mushrooms or zucchini or eggplant
Saute them with a little oil or butter if you eat butter, and scatter over green beans (this works well if they are a little chunkier)

I make kidney bean burgers
Puree onion and garlic in the blender add the kidney beans with a little water and then stir in bread or cracker crumbs and spices then form into patties and fry or grill on a george forman....I LOVE THESE

Thanks, this gives me a place to start:

topping for casseroles
filler for stuffed vegetables
patties

WE'll se what I make next week with them. I'm thinking the bean patties first.
