We love portabello mushroom burgers and corn on the cob from the grill. yummy. now I'm craving...
Grilled zucchini slices (cut lengthwise in strips) and roasted/grilled red pepper slices on toasted bread with olive tapenade is so yummy.
Grilled portobello caps with balsamic vinegar and a brush of olive oil, topped with a grilled tomato slice and served with shredded basil, on a bun or without.
Another vote for grilled corn brushed with lime juice, Earth balance (or whatever you use) and a few grinds of cracked pepper.
I make a great cold pasta dish with grilled zucchini and peppers, sun-dried tomatoes, garlic, olive oil, balsamic vinegar, garlic, basil all tossed with cooked pasta of your choice.
Grilled pizzas are great!
