I am desperately looking for some great vegetarian recipes or cookbooks for the grill. It is FINALLY feeling like summer here and I just can't stand the thought of turning the oven or stove on! Any ideas??? TIA!

Grilled zucchini slices (cut lengthwise in strips) and roasted/grilled red pepper slices on toasted bread with olive tapenade is so yummy.

Grilled portobello caps with balsamic vinegar and a brush of olive oil, topped with a grilled tomato slice and served with shredded basil, on a bun or without.

Another vote for grilled corn brushed with lime juice, Earth balance (or whatever you use) and a few grinds of cracked pepper.

I make a great cold pasta dish with grilled zucchini and peppers, sun-dried tomatoes, garlic, olive oil, balsamic vinegar, garlic, basil all tossed with cooked pasta of your choice.

Grilled pizzas are great!

My absolute fav. I've made them too many times to count recently. I love Portabello mushrooms! :sigh:

Marinated tempeh is good grilled.

I've also done tofu kabobs, which are fun for the kids.

Any kind of marinated veggie is great grilled.

I'm having a more difficult time with tofu dogs recenlty,--I can;t seem to find any that are organic, so I haven't done them yet this year.

Amy's has good veggie burgers that are also organic.

BBQ tofu!!!

We love potatoes diced in foil with olive oil and garlic!!

Homemade millet burger- cooked millet mixed with bread crumbs, diced carrots and celery, and spiced to your desire- we like braggs and curry
form patties and grill em up!!

marinated seitan kabobs- yummm

This time of year is sooo fun for cooking!!!!

I love filling a skewer with lots of veggies and brushing them with olive oil. When they are cooked a sprinkle them with pepper and fresh thyme. Sometimes I eat them with some couscous or brown rice but most of the time they are delicious all on their own!

BBQ Tempeh with grilled whole carrots and corn on the cob. Oh and big fat whole tomatos plopped on the grill for a couple of minutes so yummy.

Cook up some polenta, let it cool completely in a large baking dish, then cut it into squares or triangles. Brush with olive oil and grill until hot through and lightly browned. I'm gonna go make some right now .

I'm not sure where you live...but there is a great distributor (May Wah Healthy Vegetarian Food) in Chinatown (NYC) that sells all sorts of vegan foods (soy, tempeh and seitan products). Here's the link: www.vegieworld.com

May Wah can deliver in the northeast U.S.

I keep my freezer stocked with mock duck, etc...and use the stovetop grill to grill up some kabobs (with potatoes and carrots, etc) whenever Saturday night rolls around. I also love grilled pears. Simply half the pears and place on grill until the flat part of the half is seared. You can brush these with red wine vinegar to give them a tart edge.

We do a lot of variations of kabobs, veggie, tofu, etc-ds loves those!
Love grilled prtabella mushrooms-we usually grill them, slice them and put them on top of rice...

grilled pizza

soft tortilla round - brush a little olive oil on the bottom. Put on grill. cover with pizza sauce. Add another tortilla on top. More sauce. toppings. heat on grill until "cheese" is melted


You can even use a store-bought crust if ou can find one that is vegan.

I love BBQ tofu (DH won't eat it).

We do the potatoes that way too, but with onions AND garlic! Yum!!

Similar to mclisa, we use a tortilla and sprinkle black beans, diced red onions, corn, cilantro and your fave uncheese or cheese if you're not vegan.

Another great pizza on the grill is pizza crust spread with bbq sauce, caramelized onions, sliced mushrooms and your fave uncheese or cheese blend. On this one, a mix of monterey jack and mozzarella is good. Follow Your Heart has both flavours.

Oh, grilled quesadillas are great too! I make one with tequila and chard. Yum!

Grilled pizzas are delish! I consider myself an expert : .

Pizza dough

To
1 c. very warm water
Add 1Tb. sweetener
And 1 Tb yeast
Allow to foam, then add

3 c. flour (I am currently loving my own blend of organic white, whole spelt, millet and quinoa, but pretty much anything will work)
1 Tb. salt

Knead until stretchy and smooth, cover and let rise double (about 40 minutes). You can make it ahead and leave it in the fridge if you like.

Cut dough into golf ballish sized lumps and roll very thin with a rolling pin. Individual-sized pizzas are easier to deal with on the grill.

Put on med. grill with no toppings for a couple of minutes, then flip and add sparse toppings of sauce and finely grated cheese (if using). Grill veggies separately and add to pizzas with cheese. Grill until cheese is melty.

Grilling the crusts on both sides keeps the pizzas from being mushy.

Try it!

Also we grill sliced portobellos and peppers and make "fajitas."

I love making kabobs out of terriyaki soaked tofu, pineapple slices and veggies - yummy.

Looking forward to trying Field Roast sausages on the grill!

Grilled eggplant is yummy! I prepare a mixture of olive oil, Balsamic vinegar, salt and pepper, thyme, garlic, and oregano and brush (or marinate) each side. Then grill for 25 minutes or so, turning once.
