Not leftovers, but clean-out-the-fridge night... baked spaghetti squash with sauteed broccoli and carrots in a roasted garlic, fresh tomato and basil sauce, with grated parmesan.

A lot of my dishes don't have names, they are more lists of ingredients. : I make it up as I go along!

Tonight it was Spicoli burgers with raw red pepper aioli and popcorn fries, all from eat, drink and be vegan. Everything was awesome.

Tomorrow we're on the road and then at a wedding so who knows what we'll find to eat and when.

Tonight was red lentils and spinach in Ethiopian simmer sauce (from a jar, but locally made at least) over rice. Quick, easy, nutritious and yummy!

Just made the menu plan for next week so I can stock up at the Farmer's Market tomorrow. Lots of new meals on the horizon...

We went to a friends house for a little dinner party and she made veggie enchiladas with beans and rice (one vegan and one with cheese). They were yummy..

I made pineapple upside-down cake .. also very yummy, and so easy- I posted it on my blog, but I got the recipe from vegweb.

I am so glad to be back online and able to find food inspiration again! Tonight we had bowtie pasta with a jarred vegetable marinara sauce. We just moved and have limited kitchen supplies so I'm going to have to start getting creative (or find money to get some pots and pans....)

Last night we had a chunky vegetable soup from Vegetarian Mother's Cookbook with whole wheat buttermilk biscuits. I discovered that I *Still* really just do not like soup, even if it is yummy homemade stuff.

Tonight we had pizza on an awesome homemade spinach whole wheat crust. I have been looking for a good recipe for a long time and this one comes very close. I'll tweak it in coming weeks and share when its done I just topped it with some sauce, spinach, onions and moz cheese- simple, but yummy

Last night DH took me out for dinner (yay!) so DD and my in-laws had mushroom and barley stew with a gorgeous olive and cheddar bread. I can't wait to dig into the leftovers.

The curried cauliflower the night before was a huge hit even though I only had a tiny head of cauliflower to work with, so I'll have to buy a bigger one and serve it again for (Canadian) Thanksgiving this weekend.

Tonight? No idea! Right now lazy me is thinking organic pasta with some kind of veggie-loaded sauce, green salad, and some of that bread from last night.

Last night was spaghetti and corn on the cob. Creative, right? lol

Tonight is Roasted eggplant and spinach pasta with white beans and pesto. We had it once before. Very yummy.

We had a lot to do today, and we weren't home much. On top of that, it was 95 degrees here today, and I really didn't feel like heating the kitchen up much, or eating anything hot. I had some whole wheat fusilli left over in the fridge, so I threw in some diced tomatoes and some artichoke hearts, drizzled in olive oil, added salt and pepper and a sprinkle of parmesian and paired it with a fresh loaf of Tuscan bread from our local bakery. It wasn't creative in the least, but it really hit the spot after a long and HOT day!!

Tomorrow is DH's birthday, and he's a curry lover. So, we are having Thai green curry with veggies and tofu over Basmati. And surely some kind of sweet delight to finish it off.

So, my pasta turned out really well tonight. I put a good helping of olive oil in the pan, added red pepper flakes, sliced onions, then garlic and spinach. I tossed it in the pasta and added fresh lemon juice and parmesan cheese. It would have been tasty even without the cheese. Oh, and lots of black pepper. It was spicy and oh-so-good!

This was with a green salad with cukes, tomatoes, sunflower seeds and raisins and homemade balsamic vinaigrette. And a rustic bread.

We went to my BIL & SIL's house and they made this really yummy black bean and rice dish with corn on the cob, fresh watermelon, morning star vegan chicken strips (which were freakishly real tasting, looking, and textured), and vegan brownies for desert. It was all really yummy!

I love Morning Star "chicken" and "ground beef". Love it! Makes good stew, soup, tacos/burritos, pizza toppings, and etc.

Last night we had pan-fried tofu, spaghetti squash with fresh salsa, green beans with butter, and sauteed red peppers and onions. It was kind of a mishmash, but it all tasted great, and almost everything (barring spices and oils) was local and organic!

This morning we used leftover red peppers and onions for omelet filling. So good!

We had a great eating day yesterday--fireant came to visit, so I made brie en croute with dried cranberries, raisins and almonds, which we ate with a sourdough baguette we bought at the farmer's market. turtle made chikpea flour fritters with corn, served with homemade mango chutney (the chutney was just outstanding), and she made a "chickpeas for dinner" curry dish from a recipe my friend Shailaja gave me and spices another friend brought back for us from India.

Leftovers today--YUM.
