It's Black Bean and Corn Tortilla Lasagna with Avocado, I think. It's a favorite here too. We all love it (even my 2 picky kids). I've made it for my parents who are die hard meat eaters, and they too couldn't get enough!!

My menu plans for the week haven't worked out. We've all been sick this week, and so we've been eating very little if anything at all. Andy, although we are all feeling better today and able to eat I'm exhausted from being sick myself and taking care of a sick family so tonight it's something that requires little cooking. We are either having quesadillas with black beans, cilantro lime rice, and guacamole, or we are having waffles, scrambled eggs and Bocca sausages.

Last night I ate popcorn :... the kids ate something much more healthful, at least.

Tonight we're having meowee's burgers (I make them into balls, though) , salad - fresh from the garden, and roasted brussel sprouts.

Tonight we are having red bean cakes with coconut sauce from Vegan Planet. I have some leftover green chile curry vegetables and brown rice from lunch out with co-workers so I'll serve that on the side.

stew night here. i put red & yellow peppers, parsnips, brussel sprouts, brocolli, carrots, lentils & black beans in some broth & then topped off with some spinach. and some homemade rolls. YUM! love soup now that the weather is getting cold.

We're having Chinese from the freezer tonight. It's been a long day and I can't be bothered. All from TJ's we've got veg gyoza, veg fried rice, and stir fried veggies with soy sauce. Simple and I think we'll all eat it.

Yesterday for lunch DH made a peanut sauce veggies over rice dish. I was really yummy. We tried to eat enough before my family holiday party, but ended stopping at Noodles and Co. on the way home.

Do you have any tomatoes (whole, stewed)? In my experience, with this soup, tomatoes are kind of important, but I'm sure it would taste fine without, just different.

We went to a potluck. My contribution was Moroccan infused roasted vegetable phyllo rolls from ED&BV with the balsamic maple sauce. They seemed to be a hit. I made a double batch and didn't bring any home. Some people thought they were lumpia though and were less than thrilled with 'just' veggies. Oh well. :

Don't know what recipe you are using, but lentil tacos are a favorite at our house (actually, lentil anything is a favorite, we really need a bit of a lentil intervention!!)

Tonight we are having Winter Vegetable Gratin, and Crusty white beans with rainbow chard. For dessert we are having vegan brownies.

What is ED&BV? A book? The phyllo rolls sound yummy- I hope it is in a book so I can make them!

Don't know if you were looking for a recipe, but we've had good luck with this chickpea noodle soup - very chicken noodle soup-like!
