Is anyone familiar with this recipe? I used to make it for DH1, many years ago, and I can't find it now. I'm almost sure it came from one of the vegetarian cookbooks that I have, probably a Moosewood. I've searched and searched and it is nowhere to be found. It is the best veggie chili I've ever had. If you don't know the recipe, could you point me toward your favorite veggie chili recipe? Thanks.
1 onion, chopped
1 clove garlic
2 Tablespoons oil
1green pepper, diced
1 teaspoon chili powder
1 teaspoon cumin powder
1 cup chopped tomato, or 2 Tablespoons tomato paste
1 cup fresh corn
4 cups cooked kidney, black, or pinto beans
1 ½ teaspoons salt
1 teaspoon oregano
Saute onion and garlic clove in oil until onion is soft. Crush garlic clove. Add green pepper and spices. Saute another 2 or 3 minutes. Add tomatoes and corn if you have it. Mash 2 cups of the beans and add to the pot along with whole beans and salt and oregano.
Simmer 30 minutes
Serves 6
I usually use 1 can of diced tomatoes, 1 can each of black, kidney, navy, and canneloni beans. (Sometimes red beans whatever I have.) Then I use the empty can to measure a can full of frozen corn. Usually I make cornbread as a side. It would be great with a salad but my family won't eat salad so I don't serve it often.
This recipe is from Laurel's Kitchen. If you get the original version it has about half the book on nutrition and things like that. She also has a bread book and a couple of others. You can usually get them on Amazon fairly cheap.
This is my favorite recipe. I was making it long before I became veggie.
