So now that everyone is expecting some sort of amazing and awesome meal...
Tonight I made roasted garlic mashed potatoes, roasted broccoli and.....
Chickpea cutlets!
No gravy because I forgot to buy mushrooms and didn't have any packets, so we just squeezed some lemon juice on top
I, too, had a good dinner night last night! We had impromptu dinner guests (next door neighbors) so it was lucky I had spent the afternoon cooking!
We had tamarind lentils over quinoa, garam masala roasted brussels sprouts and samosa stuffed potatoes.
With a little white wine on the side.
Oh, and it was my neighbor's birthday, so I made a double batch of Dreena's Homestyle Chocolate Chip Cookies! If you haven't made these cookies yet, DO IT NOW! They are hands-down the best chocolate chip cookies I've ever had, vegan or not!
We went to brunch at Seva to celebrate. We were so dull, we ended up not even having dinner last night. But I made birthday cake, teh Our Favorite Chocolate Cake from Vegan Express. I made it as a layer cake with pureed cherry preserves in the center and the frosted with the amazing chocolate-peanut butter frosting. My cake was a little rustic, messy, and looked far from perfect, but it sure tasted good.
I am still thinking of ideas for tonight's dinner.
That's funny, Jadzia, we almost ended up at Seva for a meal yesterday, too! Instead, we holed up at home. turtle made black-bean and sour cream tacos for me and she ate while cooking. It was all totally formal.
I made a soup with onions, leaks,celery, carrots, potatos, boullion cube, 2tbs miso and a can of white beans. It was so good that I ate it for lunch and then dinner. It was even good when I sprinkled(poured) seaveg mix and nutritional yeast all over it. The garlic croutons didn't hurt the taste either.
I went to Chevy's the other day and they had artichoke, mushroom enchiladas that were really, really good. I'm going to attempt those sometime this week. That was one of the only recipes that wasn't in their cookbook

I made Chickpea Cutlets last night too!!! My DH LOVEEED THEM!!!! I thought they were ok.. hopefully next time i make them I'll have the right spices. I made the mustard sauce to go with it, and steamed spinach & arugula on the side.
With a leftover cutlet i made a sandwich that i liked much better.
I made a meal two nights ago (I came to report it, but there wasn't a March thread. hehehe) that dp RAVED about, and said it should be a weekly thing.
I made tofu-nutballs with grape jelly sauce. When I first mentioned the idea to dp (of nonmeat balls with the sauce) he laughed at me. My inspiration was this recipe in post 16. I used tofu instead of eggs, and left the cheese out. I also added oil (because my food chopper needs liquid- I'm going to buy a food processor), oats (because there was too much liquid) and vital wheat gluten (I have no idea if it was helpful or not).
The tofu-nut balls were actually pretty good by themselves! They were very good simmered in the sauce, and served over rice, with a nice strawberry spinach salad on the side. yum!

Let's see, Saturday I went out to dinner with dh and ds2. We hit a new Indian place, they specified on the menu the vegan items. So nice. Had chana dal, kofta curry, rice, and parantha.
Last night I planned on making risotto, but I fell asleep with ds2. So instead I sauteed some greens and ate them with tahini sauce and the last piece of my homemade bread.
Tonight I'm making red bean and quinoa chili with corn tortillas.
Yesterday we had home made mashed garlic potatoes with string beans and a green salad on the side.
For tonight I'm actually still a bit clueless.. but after reading all those yummy 'meatball' and bean burger recipes I'm thinking I'll make something along those lines!
Tonight we had cheater baked beans (that i made yesterday), smoky fried tempeh and sauteed collards, all from V-con. And a green salad with hemp nuts on top. It was all awesome! I especially liked the collards, they were smoky and yummy just like from down south, except minus the gross ham hock.
Now I'm thinking some chocolate chip cookies and almond milk.
I picked up some pre-marinated tofu, so I think we will have that tonight, with a steamed veggie on the side.
I really want to make the chickpea cutlets, but I cannot find the vital wheat gluten anywhere! I have looked at all of the HFS in the area! I will have to check WF the next time I'm near one.
Tonight is Mexican corn, tomatillo and red bean stew from The Vegetarian Meat and Potatoes Cookbook. I also have cauliflower that needs to be used today, so I'll steam that. We will have corn tortillas with the stew.
Tonight I ended up making Samosa-Stuffed Potatoes (from Veganomicon), my own quick version of Okra Masala, and Indian Cabbage Slaw.
The potatoes were good, but I am not sure worth all the trouble. It always takes me at least twice as long to make anything from Veganomicon. I find their recipes so complicated, with too many steps.

I agree, Jadzia. That recipe should have went together much faster. It is basically just twice baked potatoes with Indian flavorings. My son sure loved them though.

Oooo, thanks for the link, I've been on a serious quest for some hard-core vegan chocochipcookies! Since I was on her site and I'm making banana bread tonight (ripe organic bananas on sale at .38/pound this weekend!), I think I'll try her maple banana bread...still looking for the perfect banana bread. Oh, and if anyone has the ultimate vegan oatmeal peanut butter chocochipper cookie recipe, I'd love to have it

We continue on our tour of Vegan Express. Had the quinoa with wild mushrooms and zucchini with a side of lemony black beans the past two nights. Tonight was the Pad Thai (with added peppers and tofu, sans ketchup ... I bet they don't use ketchup in Thailand

I can not master the fine art of making quinoa...it's either mushy or fried to the bottom of the pan
:. And why? oh, why? do I follow Ms. Atlas's recommendation to pair lemon with black beans when my heart and soul knows that only lime can make black beans sing? The Pad Thai was good, but not at all like pad thai (IMHO).
I think my favorite thing about this cookbook is the voluminous amount of food each recipe makes. DH and I eat a lot, but there's enough for two nights and at least one lunch with every recipe I've made so far.
Tonight I made burritos. I found this recipe through someone's blog here, but the lentils ended up not very saucy. I heated up a serving of veg*n bean chili from the freezer and we ate burritos with diced tomatoes, the lentils and some chili with the salty guacamole from Eat, Drink, and Be Vegan on whole wheat tortillas. I have given up trying to make my own tortillas with a toddler- its way too time consuming and they never turn out quite right

I have seen Bob's Red Mill Vital wheat gluten at Kroger/Smiths and Albertsons, if you have either of those in your area.

The vital wheat gluten should be found with flour and bread-making stuff in any grocery store.
Tonight I made this smothered tofu with mashed potatoes and broccoli. Last night I made the pineapple-cashew-quinoa stir-fry from V-con. Both were off-the-hook.
Tonight we are having Pasta Italiano with eggplant and zucchini. It's a mix from Trader Joe's. Also a salad made with local, organic lettuce and tomatoes fresh from the Co-op.
I'm making [spinach] linguine with basil-cilantro pesto and artichokes from Vcon, only with reg linguine and not the spinach kind.
