With a new baby in the house, I have been thinking about buying a slow cooker. But I can never seem to find many vegetarian recipes. Where do you find your vege slow cooker recipies? Are there any good books? or online?

that's why i'm asking. i've seen a few slow cooker recipe books but they are full of meat recipes!

I have this book, and I love it. Most of the recipes are vegan or can be made that way.

I hear that's a really good cookbook.

My favorite vegetarian slow cooker meal is lentil stew. This make about 6 hearty servings. I usually have it with whole wheat toast and butter. It's super cheap and super healthy.

1.5 cups lentils
3 medium to large carrots peeled and chopped
5 red potatoes, cubed (can also use yellow or peeled Idaho potatoes)
1 large onion chopped
2 cloves garlic, minced
4 cups of water and two veggie broth cubes or 4 cups vegetable broth (or half water, half broth)
Pinch of salt

Add 1/2 tablespoon cumin and 1/2 tablespoon chili powder during the last 15 to 30 minutes (this is really a to taste thing).

Stick everything into the crockpot and cook on low for about 7 hours (longer won't hurt it).

We really like the Slow Cooked Ziti from Fresh From the Vegetarian Slow Cooker. We have a few other recipes that we like from there. But the ziti is our favorite.

Sounds good. I got a slow cooker for Christmas and still haven't had any successful meals from it. I will try that one.

Great thread! I have always wanted a slow cooker but thought I wouldn't use it as much as most recipes I have seen are for meat dishes. I'm a cook book addict though so I will probably order that book posted above

I love "Fresh from the Vegetarian Slow Cooker". Last night I made the Winter Squash & Sweet Potato Soup (served w/a simple spinach salad & fresh bread). Today I am making Veggie Gumbo.

With four young kids about the only way I make dinner is to prepare ahead of time & then cook at dinnertime or use the slow cooker. The dinnertime hour is just waaaay to crazy around here.

If you don't have one, I highly recommend it!

Thanks for posting this one! I made it today and we just got done w/ dinner. IT WAS AWESOME!!!

we were not home and so I didn't get a chance to add the spices, but even without the extra kick we all really enjoyed it.

You can use seitan in a lot of traditional crock pot recipes (just brown it with the onions and then throw it in, it comes out soft, I made Seitan with Red Wine and Mushroom Gravy from fresh from the vegetarian slow cooker last night and it was great, even my unveg kiddies loved it, next time I'd add broccoli to it at the last minute but otherwise it was great).
