I am making a vegan meal when we stay at my DF's sister's father's (confusing, I know) house this weekend. For a fishing trip (Planned by DF when he was omni, for still omni DSD). His sister's father has cancer, and he just couldn't bring himself to cancel the trip.

DF did, however, explain that we have a few more dietary restrictions than the last time we visited (DS and I were vegetarian), and he offered us up to cook dinner for them.

DF wants falafel (since it is Father's Day weekend, I let him choose). So I'll do the little falafel balls in pita, have lettuce, tomatoes, onion, and tzatziki on the side. DF is thinking about making hummus. But it feels like the meal needs a little more?

Ideas?

I wouldn't scoff at dessert suggestions, either.

It's a middle eastern salad. Chopped veggies (I always go sans lettuce): green, yellow, and red peppers, red or green onions, tomatoes, etc. Dressed with: 1/2 cup lemon juice, 1/2 cup olive oil, 1 tablespoon sumac. If I have it on hand, I'll add fresh mint and some chopped parsley.

Tabbouleh? And watermelon! Sliced cucumbers. Dolmas - TJ's has inexpensive jarred dolmas that are vegan and awesome. Baba Ganoush is great, too, but more effort.

Tabbouli, lentil soup or lentil salad?, Israeli za'atar salad, olives, roasted veggies (peppers, eggplant, onion, tomatoes) or veggie kebabs, and/or stuffed red peppers.

dessert could be figs, dates, nuts, yogurt, halvah, baklava, almond shortbread

That's kind of sweeping through the Mediterranean, Middle East, and a little North African :P

ATM, for the rest of the meal, I am leaning towards doing some sort of couscous pilaf (couscous, wheat berries, dried apricots, pistachios, zucchini, flat-leaf parsley and mint) and a tomato-cucumber salad with a garlic-tahini dressing. We'll probably have DF's hummus, and for dessert, if the baklava idea doesn't pan out, I was thinking mango tart involving cardamom?

You would lose some flavor notes without the honey, but it has been done. Maybe add some rose or neroli water and vanilla in a sugar syrup?

Oh, about 7 PM in The Middle of Nowhere, MN.

I googled "vegan baklava" and found a ton of hits. So I'm set!

Sounds so yummy, I love this type of food in summer. We eat falafel with a side of sweet style couscous and a thrown together cuc salad. I use a bit of cinnamon, raisins, dried apricots, almonds, and other spices in my couscous. Sort of like this, but made with vegan ingredients, and I wouldn't use so much oil or agave (honey sub for me).

I have a giant watermelon sitting in my car... I really am thinking about throwing some lime juice and mint on it. Yum.
