The Pumpkin Baked Ziti with Carmelized onions and Sage Breadcrumb topping, from Veganomicon. OH. MY. GODS!!!
Also, pumpkin/butternut squash soup, apple cobbler, honey/ maple baked lentils, and cornbread.
Our Halloween/Samhain tradition includes an "Ancestor Feast" that consists of such once-a-year treats as butternut squash, carmelized onion and chipotle tamales, homemade croissants, and coomla (a traditional Norwegian potato-oat dumpling traditionally boiled with salt-pork, and served with lots of butter. I just use heavily salted water and Earth Balance), and a few other more every day favorites that meant something to one of our beloved dead, like a (lentil-nut)shepherd's pie, lasange, oatmeal cookies and my once-a-year can of Coca-Cola. Always Coke, always can. Plus whatever other guests bring.
Oh, and MAPLE POPCORN. I don't have the gumption to go find the recipe right now, but it is maple syrup boiled to a soft caramel with a tiny bit of butter/EB added and then poured over hot popcorn.
