I can't believe it's September already! Sitting here in Mpls watching the RNC coverage and dreading heading to downtown St. Paul for work tomorrow morning.....

Anyway, tonight was Veggie Pot Pie with zuke, yellow squash, carrot, celery, potato, and some Morningstar "chicken". Honeydew chunks on the side.

Triple chocolate cookie for dessert.

Tonight I am making a whole wheat broccoli ravioli with some sauteed tomatoes from the garden and a little pesto, and some steamed spaghetti squash (also from the garden).

Tonight was tofu salad (diced baked tofu, chopped green olives, black olives, cashews, celery and scallions tossed with Veganise) served over lettuce. Simple but delish.

Last night was tofu, squash, fresh corn, mushroom and onion burritos with cilantro-lime rice. Oh, with avocado slices, too. And fresh sweet orange cherry tomatoes - they're like candy!

Last night we had spaghetti- not very exciting but unfailingly good.

Tonight was rice and beans with fire-roasted tomatoes, zucchini and corn. Served with blue corn tortilla chips.

Tonight we had massaman curry - onion, carrot, yukon gold potatoes, garlic and tempeh in a coconut milk sauce with some curry paste and peanuts. Over brown rice.

It's a rainy, gloomy day in Chicago, but in the spirit of being grateful for the rain after so many days without any, we embraced the coziness and made soup. It's smelling wonderful right now: cauliflower, diced red potatoes, leeks, broth, cumin, garlic powder, and EB. We'll have it with bagels and tofutti cream cheese & fresh homemade grape jam I made yesterday.

Which reminds me: I have to brag a little! I picked grapes off our vines and made the most delicious jam EVER! It was so rewarding!!!

I'm in central Illinois and it's been rainy and gloomy here too. I decided that I would not complain because it could be so much worse, like all the tropical storms and hurricanes down south and the midwest flooding earlier this year, and like you said, we needed some rain too.

I made chili and cornbread muffins from Vegan Lunchbox. That is my absolute favorite corn bread EVER!

Keeta - I'm drooling over that curry! This weekend...

Last night was mung beans and rice with garlic green beans (we have an abundance of greenbeans at the moment) and apples.

Tonight was potato leek soup (dying for a rainy gloomy day over here lol!), fish cakes for those so inclined, onion and garlic greenbeans, and rice with kidney beans.

Tomorrow I think we will splurge and have corn on the cob, salmon for those inclined, and a quick pasta salad with summer squash, great northern beans, and freshly made tomato sauce from the csa/container garden on the deck.

Either Sat. or Sun. I plan on making that curry...too good to pass up!

I tried to make a quick dinner because DF started out the evening wanting to go walk around St. Paul and people-watch... after watching the news coverage, I'm glad we didn't go. The last thing I need is an 18 mo-old with tear gas in his eyes.

I did a creamy white bean and veggie casserole flavored with Old Bay seasoning and topped with biscuits. We had CSA cucumbers and my DSD's mom's garden tomatoes on the side with tahini-dill dressing. DF grabbed a couple of giant vegan cookies for dessert at the coop.

Waaah - I wanted to make that curry tonight, but I've got a rotten cold. So dh is in charge for him and ds, dd is at a sleepover, and I'm holing up under the blankies. I did make vegan tortilla pizzas from our CSA sauce (made from their tomatoes, zucchini's, spinach, and a bit of spices and oil on hand - it's SO yum!). I couldn't smell or taste them, but they sure looked good!

Not to seem TOO d'uh, what is a DF?

Cool! My VCTOTW just came in the mail yesterday and I am so excited to start baking. DD has a birthday soon.

Tonight I am tired and lazy after a long day at a football game and I just reheated an Ultimate Veggie Burger I made last night (from Vegan Planet) and ate it on a vegan bun with ketchup. It's my favorite homemade veggie burger so far...

I was so pleased with myself- I put veggie chili in the crockpot this morning before leaving the house to run a bunch of errands. Got home 5 hours later and realized I never turned it on!!

So, it's running on high right now and I'm hoping it will be done in time to eat tonight.

Tonight we had eggplant parmesan cutlets with tomato/pasta sauce, fresh mushrooms fried in olive oil and seasoned with garlic salt & Spike and a few slices of Italian sour dough bread on the side.

For tomorrow I need to think what I can do with the big bag of red bell peppers I got from the market the other day!?..

Mmmm, I have a bunch of red bell peppers to use and soup sounds great! I love this thread.

Last night we had Quorn gruyere cutlets, mashed potatoes, and steamed wax beans. The monochromatic color scheme really upset me, so I added cut up cucumber, red bell pepper, and baby carrots to our plates.
