i made the pumpkin ziti this week and it was great!!!
but it would have taken every dish in my kitchen if i hadn't had pre roasted and pureed the pumpkin, predone ricotta and pre crumbed the bread.
As it was it took 3/4 of the dishes in the kitchen. Whew!

I made the Lemon Coconut Bundt Cake yesterday for my writers group--with slight alterations. I reduced the sugar to 1 cup and the coconut to 1 cup. Very, very moist and good--though could have been a little more lemony, will add more next time.

And the cooking time for me was 10 minutes less than they said.

I got Veganomicon for Christmas:. I thought I'd revive this thread in hopes others got it too.

I have been borrowing from the library this fall so I've tried some of the recipes.

I've made:
Banana nut Waffles - yummy!

Black Bean burgers - good
Snobby joes - a little to spicy so I'll be cutting back on the chili powder as I think another poster recommended.

Roasted Butternut Squash with Coriander seeds - okay - I needed to cook the squash longer.

Fresh Dill Basmati Rice with Chard and Chickpeas - good.

Tamarind Lentils - liked them.

Chickpea Cutlets are a hit.

Potato and Kale Enchiladas- LOVE these.

Leek and Bean Cassoulet with Biscuits - good.

BBQ Black Eyed Pea-Collard Rolls - Dh and I liked them, kids did not.

Spaghetti Squash Mexicana - Very good.

Spaghetti and Bean balls- couldn't fool my meat eating teens but I thought the beanballs were good.

Spicy Tempeh and Broccoli Rabe with Rotelle - good

Chewy Oatmeal Raisin cookies - delicious

I made the Banana Bread today which was yummy (I used half the sugar). One weird thing on those though, they mentioned adding chocolate chips several times in the instructions but they were not in the ingredients list so you wouldn't know how much to add. Not that I wanted them anyway. I think I'll add some chopped walnuts next time though.

The potato kale enchiladas are my absolute favorite, wait no- the baja tempeh tacos are my absolute favorite :: followed by the enchiladas. Both seem to take forever the first few times you make them- and then get WAY easier and faster as you get the gist of them.

No one has mentioned the black bean and acorn squash empanadas. These are awesome, and taste just as good cold as hot. There are a ton of leftovers. We bring them with us on outings for a week.

The hot sauce tempeh is amazing and not super spicy.

Mashed potatoes with jalepeno corn gravy- TDF.

Lemony roasted potatoes are sooo good- but I needed to add like 15 min to the cooking time.

I don't like the cutlets. I just hate the chewy wheat gluten texture. I have make them GF a few times but that are just okay. I love the mustard sauce.

I have not tried any of the deserts, mental note must bake lemon coconut cake!

I just looked at the Penne Vodka and the Baja Tempeh Tacos. They do look good.

Just wondering, since we don't drink alcohol, would there be a substitution for the beer and the vodka in these recipes? I'd hate to buy a six pack for 3/4 cup of beer or a bottle of vodka for 1/4 cup.

Most stores will let you just buy a can off of a six-pack. For the vodka you could buy a mini-bottle.

We don't drink beer so I usually just get one bottle from the grocery store for the recipe. You can probably made the marinade without it, but I am sure something would be lost in the flavor.

I also don't know about the vodka- I think it is pretty important. We have a bottle and that is the only thing we use it for. lol

I made the potato kale enchiladas for our Christmas dinner. My family is omni, but my SIL is vegan, so we wanted something she could eat. They were so good!

I found the recipe online, but I want to check out the book from the library for more recipes.

Last night dh made the caramelized onion- butternut roast with chestnuts. It was the first time I remember ever eating chestnuts. One of my favorite meals yet!

I buy alcohol purely for cooking. I have vodka and red wine on hand in my spice cabinet almost at all times I just get the cheap stuff too.

Oh, yes! This cookbook has GREAT recipes! My faves:

Lemony Roasted Potatoes
Potato and Kale Enchiladas
Leek and White Bean Cassoulet
Spicy Eggplant and Peanut soup (yum!!!)
Chickpea Cutlets
Mustard Sauce (I just made this and had no capers and instead added a couple of finely chopped green olives....it was GOOD and you couldn't tell there were olives in the sauce!)
Tamarind Lentils (yummy!)
Chickpeas Romesco (freezes well, too!)
Penne Vodka
Sweet Potato-Pear Tzimmes


Yeah, I like this cookbook a lot!
