The best I can do tonight is baked potatoes with an array of toppings to choose from: steamed broccoli, diced chicken (from a rotisserie chicken from the grocery store), sour cream, cheese, etc. We'll see how it goes over with DS -- so far he's not a big potato eater, but maybe if there are fun toppings to sprinkle he'll be more into it.

Oh, you must have seen them before, maybe they're called something else in your area. Buttertarts are my reason for living! They are a yummy little tart with a brown sugar/butter filling. So good but soooo bad! (I had 3)
We're having chicken and Boursin pasties, and some fresh sweet corn that we were told is really good!
I've been cooking for the freezer today, so if we're hungry later, we can dip into the chili before I freeze it. Plus, I see that DH is in the kitchen right now making some guacamole.
Guess it's just going to be a grazing free for all! My favorite.
Last night we cooked Indian...used a premade sauce, but did up our own lamb chops fried w/ some yogurt coating, and I tried my hand at chapatis, which we ate with a spicy mango chutney. It was awesome!

OMG! That sounds outstanding!

Sautee 3-4 minced garlic cloves in butter at the bottom of the soup pan. Add 6 cups veggie broth and let boil. When boiling, add the tortellini (I just use frozen). After 5-6 min, add a can of diced tomatoes (or dice your own and add them) and a couple handfuls of fresh chopped spinach (frozen works too). SPice it up with some parm cheese, salt, pepper, oregano and basil. Heat through til spinach wilts and done!
I had salmon baked in lemon juice with some spices and quinoa around 3 this afternoon. I think for "dinner" I'll just stir-fry up some veggies and maybe make a grilled cheese sammich.
My eating habits are so random lately. I mean... I'm eating healthy and all, but what I eat when can be described as erratic at best.

Thankfully my DH saved the day and is currently making something for all of us while the kids snack and I sit with my feet up. I've been contracting all day from doing to much and I'm just completely wiped out. The kids bedtime is in 20 minutes and I can't believe I put off dinner so long. Cross your fingers these ctx stop soon, as I am way too tired to have a baby tonight!
we had grilled cheese sandwiches and spinach salads for dinner last night. i wasn't really in the mood to cook as i'd been messing in the kitchen most of the weekend. oh, and we had fresh pineapple for dessert - yummy.
tonight it will definitely be some sort of chicken dish - i've got 6 chicken breasts in the fridge that need to be used before they go yucky. so probably chicken sauteed or baked with some sort of sauce, probably over brown rice, and likely with another spinach salad or some sauteed spinach on the side since i went to Costco over the weekend and bought a ginormous bag of spinach that i need to use up before it wilts. i just couldn't resist, it was the same price as a teeny bag as the regular store, and i love fresh spinach!
Tonight we are having Taco's, maybe green chile chicken tacos since that's what I'm in the mood for! Gotta see if I have all of the ingredients or if I need to make DH stop at the store. Maybe I'll make it with some cheesy mexican rice too. Yum!
We are doing tacos tonight too! They are veggie tacos...Im making them in "taco bowls"-- we use a muffin pan and put the tortillas in it to crisp them then add the filling and top with lettuce, salsa, cheese etc. They are a lot of fun!
Well, the baked potatoes were actually really good last night! And it was great to have such an easy dinner to make.
Today I'm going to make piroshki to freeze for after the baby comes, so I'll keep some of those out to have for dinner tonight -- my grandma's recipe -- mmmmmmm!!
