Dh cousin (from New Jersey) is coming to visit us (in Washington state) for a week in August. He told us he has Crohn's. He told us not to go to any trouble as far as meals, he eats what he wants, he just watches amounts.
I thought it would be nice, however, to try and fix things that might be healthy AND safer for him. I understand that Crohn's is affected by dairy, so I plan on having things with almond cheese (rather than dairy cheese).
It will, no doubt, be hot while he is visiting, so we will do a lot of grilling outdoors. But, I love to do desserts and am wondering what would be okay with Crohn's. He said he eats ice cream, but only in small amounts. I'll make huckleberry ice cream (he's never had huckleberries and, well, you just HAVE
to try them if you're visiting our area!
) and huckleberry pie, as well.
Is there anything else we should know? He is pretty private about the Crohn's and doesn't want to make it into any big deal. We just want him to have a fun and comfortable time while he is with us!
Any ideas, suggestions and RECIPES are gladly accepted!
