help! Why did my coconut oil turn to solid all of a sudden? I had it on my counter top and one minute it was liquid and then the next day it was solid! It did get cooler in the house, is this why and is it still safe to use? Will it turn back to liquid?

Coconut oil's melting point is at about 25ºC (77F) IIRC. So if it gets colder than that it will turn solid, if it gets warmer it will melt again. It should be fine.
