I have pumpkin chili on the stove right now. : Here's hoping the kids like it, because I am making it again to freeze.

Pumpkin Chili

3 Cans of your favorite beans ( I have kidney, pinto, and garbonzo)
1 14 oz. Can of diced tomatoes
1 14-15 oz. Can of pumpkin
1 1/2 Cups Frozen corn
1 Large diced onions
3-5 cloves smashed garlic
1/2 Cup diced green pepper (optional)
1 1/2 Cups veggie crumbles or browned meat of your choice (optional)
2 Tbsp. Brown sugar
A Splash of cider vinegar

Saute onions and garlic until almost transparent
Add spices and corn and peppers
Add beans and pumpkin
Add browned meat or veggie crumbles (both are optional)
Add water
Add vinegar and brown sugar
Simmer until beans are done (about an hour)
You can add salt and pepper to taste as well.


We are having this with cheese, pumpkin bread, and apple cider. yum.

Mamajoy, are you regular squash eaters? I admit the idea of pumpkin chili sounds gross to me but I don't sit down to roasted squash with a smile either. I do like to try to convince myself that I like squash in other things but pie or bread every now and then and have attempted soups a couple of times btu have not liked one yet.

I have heard of people using pumpkin in place of various meats in dishes, cubed. I have not tried this myself.

Let us know how the chili turns out!

My kids won't eat any orange vegetables thanks to my DD. That's why i used canned pumpkin instead of diced. She wouldn't touch it if it looked like squash. The chili doesn't taste like pumpkin, it just makes it creamy, and acts as a filler. It compliments the spices nicely and mellows them. Even my DD ate an entire bowl of this chili without complaining. That is really saying something.
