i made some homemade veggie soup w/ barley last night and i gotta say it is DELICIOUS!!! it's hitting the spot for the third time in a row mmmmmmmm....

Something about cooking just pushes me over the nausea edge right now...I wish I could handle it because that soup sounds delicious! Maybe I can get it to-go?
i made this AMAZING PIZZA FROM SCRATCH -- and it was so easy!!! the dough is killer, just throw on some organic spaghetti sauce, cheese, and whatever else and YUM!
you can throw the dough together, go for a walk or a nap and boom, its done. of course having a cusinart or a stand mixer may be essential for this one.
1/2 cup 110 degree water
1 packet instant yeast (2 1/4 tsp)
1 1/4 cup water, room temperature
2 tbsp extra-virgin olive oil
3 cups bread flour (plus extra for work surface)
1 cup whole grain flour of your choice
1 1/2 tsp salt
In a large measuring cup with a spout, add 110-degree water. Gently sprinkle in the yeast and let stand for 5 minutes, until the yeast dissolves. Add remaining water and olive oil and stir.
In an 11-cup (or larger) food processor with the dough attachment, pulse together the flour and salt. Continue pulsing while pouring in the liquid ingredients (reserving a few tbsp). Add the reserved liquid if the dough doesn't become a ball. Process the dough about 30 seconds longer, until smooth and elastic.
Transfer the dough to a floured work surface, knead it slightly and roll it into a ball. Place dough ball into a large bowl coated with olive oil.
Cover tightly with plastic wrap or a plate.
Let rise about 1 1/2-2 hours in a warmed room, until the dough has double in size. I usually turn the oven on to about 200 degrees and place the dough to rise on the oven.
When dough has risen, deflate it by punching it with your fist. Divide the dough into 3 even balls and freeze or roll it out and bake your pizza immediately. Makes dough for 3 pizzas.
bake the pizza on a cookie sheet at about 400-420 degrees til bubbly!!

I managed to eat a quarter of a burger and a couple bites of tots..... I did eat a chocolate shake earlier in the day.
Right now it seems my sweet tooth is acting up - and ice cream is sounding heavenly!

Today for lunch I made a Southwest Vegetarian casserole and I have to share the recipe because it is DELISH and easy:
3/4c brown rice
1 1/2 c water
Cook rice for 40 mins or until done.
In a shallow casserole dish (I used a 9x13 pan), mix:
1c sour cream
1 can black beans (rinsed and drained)
1 can niblet corn (drained)
1c shredded cheddar cheese
1 can diced tomatoes (with green chilies, or regular)
Top with 1/2 a chopped onion and a can of ripe, sliced black olives.
Bake at 350 for 30 mins
Top with another cup of shredded cheese and bake another 10 mins.
Let sit 10 min before serving.

Last night made vegetarian chili and cornbread which I usually LOVE, but by the time it came to eat I wasn't into it at all. Hey, I still ate it but I couldn't say I was enjoying it.
Over the weekend I asked to eat out twice in one day, b/c I just couldn't stand the thought of cooking. I guess its a good excuse to be taken out to eat
