and then I ATE what I cooked -

AND it was healthy -

I consumed *gasp* VEGETABLES!

Whew! I bet I sleep well tonight. I might even have seconds - hallelujah!

red peppers, yellow peppers, zucchini, onions, carrots, tomatoes, ground turkey, topped with mac n cheese made from provolone cheese (italian style shepherds' pie ala RAchel Ray)

SO GOOD!!!!!

okay, that even sounds kind of appetizing to ME! i haven't cooked in more than 2 weeks but you've given me hope!! good for you- that's one healthy meal, mama

haha! I've been cooking AND eating for over a week now! I feel so much better now that I can actually stomach beans, vegetables, and other good stuff.

Of course I'm ruining it all with the sweets I'm eating in between...

I've been cooking off and on a few times per week but I rarely eat what I cook for the whole family.

I can't eat veggies either. In the beginning of this pregnancy I was munching carrots and broccoli and inhaling my salads at dinner each night but at this point, nope. I can't stand em. I wonder why? I have been eating a lot of fruit though, especially bananas and tomatoes for some reason.

I too have been having a hard time with veggies (and normally I am all about them), and have been strongly craving fruit. Lots of bananas and pears for me. . .and wishing it was summer already, cuz what I really want is watermelon!

Julia--you inspired me. . .I have shopped for the ingredients (with vegetarian substitutions) for that Italian Shepherds pie and will make it over the weekend. I have been better with cooked veggies than raw lately and that recipe sounded really good!

It is good, Kismet - BUT, I'l warn you, if you like flavor, don't by shy...we find it's very bland (not bad, just bland)....we put DOUBLE the garlic, add LOTS of basil, and we're thinking next time we'll do half and half with the cheese, half provolone, half parmesean or fontina or something - and extra veggies, and tomato paste. AND, it makes a gigantic portion, so I usually make two containers and put one in the freezer. If it's just the two of you, it very well could make THREE portions!
