We use our grill a lot, so I have several meals worth of chicken breasts frozen in marinades, and I'm hoping London Broils or flank steaks will go on sale. I freeze them in marinade, along with a pack of sub buns and cheese slices and we get two meals--first as flank steak, the second as Philly cheese steak sandwiches.
I also cut up chicken breasts and froze them with the sauce for bourbon chicken, and got two batches of creole shrimp ready to go. I can do skillet meals in the summer, but no casseroles.
Finally, I want fast lunches/snacks for me! So I am making several quiches that I'll cook and cut up and freeze so I can just microwave a slice when I'm hungry, and the same with soups--I've made tomato and bean soup so far and want to do veggie soup, all frozen in individual portions.
