I usually make a lot of casseroles, but this is really great to have the numbers for storing things. I do (and already have) store browned ground beef and chicken, diced veggies...it would be great to have rice and other starches already premeasured. I didn't know about the potatoes, though it makes sense if you can BUY them frozen that you could blanch them yourself. I have a mandolin slicer, that would make it super easy to get through a case of potatoes quickly!

So far I have about 25 lbs of ground beef, 20 of chicken (both precooked, sliced into chunks or fajita/stir fry), about six pounds of onion (both diced for soups/casseroles and sliced for f/sf), a few pounds of celery and green peppers prepared the same way, and then broccoli, carrots, assorted squashes, LOTS of fruits (sliced and blanches for pies/cobblers)

Next, I would like to do the potatoes for freezing, and then premeasure the starches. I'm trying to decide if I should do separately stored seasoning packs, or just mixes with a measurement like "add 1/2 cup for each 'packet' of seasoning required". What do you guys think?

hey ladies no pregnant but let me warn you i had a TON of frozen meals for after DD was born and well she ended up beong intolerant to dairy, soy, nuts, wheat, gluten, corn, fish, shellfish, seeds, beef, eggs, and strawberries........so aha i could eat nothing and i would love to report that DH ate them but hes a "no leftovers" kinda guy.....so i gave most of it away...

Meh. We're already intolerant to most things, so I'm not too concerned.

Also another reason to store portions of things to mix later lol!

I've been slowly freezing things this past week or two. So far I have:
3 batches of taco seasoned cooked ground beef with peppers and squash from the garden
1 batch of cooked sloppy joe filling
2 bags of homemade tortillas
1 bag of unseasoned cooked ground beef
1 small bag of cooked chicken thigh meat
2 bags of cooked pinto beans
3 lunch sized bags of carrot tomato soup (or to use in a recipe)
1 batch of homemade breadsticks

next week I want to do french bread pizzas and more beans.
