Yes, you can freeze it. Don't defrost it. Put it directly into the hot oven to roast still frozen, it'll take a bit longer to cook and it will be softer in texture, but the quick defrost will lessen the textural damage. Or stick it in a soup you're planning to puree. After freezing/defrosting it will be fairly mushy.

We usually roast it. I just bought 2 bunches at the farmer's mkt w/o realizing we didn't eat the ones I bought last week. Do you think I could freeze it as is in a ziploc bag, then dress it frozen (salt-pepper-olive oil) and defrost/roast as usual (10-20 min at 350-375)?
