Thanks - much better than the other day. I seriously thought it was never going to end.

apeydef What no dinners tonight??
Today was my big shopping/errand day so I got a rotisserie at SAMs club. I also like to get their big containers of feta. So I made a semi-Greek salad with cut up chicken and Homemade dressing.
Tomorrow I'll probably make buffalo chicken dip with the rest of the rotisserie. It's so good. It's filling so I make it for a dinner. I know not the healthiest dinner but I don't make it often. The kids will have something else for sure!

kitchensqueen Migraine here, so husband made chicken noodle soup. I'm hoping comfort food helps me feel better, because Tylenol isn't even coming close to putting a dent in it.

KatelynRose I need to go to the store but I'm planning on making Salisbury Steak with mashed potatoes and broccoli..

Trying to make the cheapest meals I can that are still as healthy as possible because we are on a tight budget right now. I just spent about half an hour carefully planning out meals that overlap ingredients so that my grocery list is less expensive. I'm actually pretty darn proud of myself for what I came up with. 14 meals planned for less than $90.. And I'm usually over on my money guesstimations but we will see how I do at the store this afternoon. Whew!

apeydef Homemade chicken fried rice.
@KatelynRose this is very easy. Begin cooking some rice. 1 cup uncooked (which makes three cups)
Sauté onions add in diced chicken add cook. Then I add in two eggs and cook until scrambled. Add in frozen peas and carrots. Soy sauce. Cook a little until veggies are thawed. Add in rice and more soy sauce.

pumabearclan I cheat: We just buy the rice or noodles from a restaurant & add our own panseared meat & veg at home. I like ghee & garlic with these meals. It's still quite affordable if you only buy the starch premade, and it tastes just as good (if not better) than the typical restaurant meal.

Although I admit that it doesn't match Asian food made by true chefs and aficionados!!

sparklemaman In response to the questions above, I too love Asian foods but can't seem to quite pull it off at home, well, I like what I make but my pickiest constituent, my sweet DD, doesn't agree I have made Mollie Katzen's Rice Fried Vegetables http://www.vegetariantimes.com/recip...ed-vegetables/ a number of times and it goes quickly and seems to be enjoyed by all.

I'd love to read some tips on Asian cuisine!

sparklemaman Ooh, what a fun thread!! So glad to have found you all

Over the weekend I made pan seared scallops, very garlic-y sauteed zucchini and shallots, seared green beans with garlic, roasted beets and jasmine rice. Last night was spinach tortellini with mascarpone cheese and a cherry tomato salad with black olives and crumbled bleu cheese. Tonight I am thinking pierogies and broccoli sauteed with shallots and carrots. I need to check out what else I have not used up from our CSA share.
