Ragana, do you mean that you just halve the onion but don't dice it up or anything? Do you remove it after cooking the sauce? That might be a good solution for us, since my DD hates bits of onion in the sauce. Also, I love swirling butter into my tomato sauce at the end!

We went to my dad's teamster day and he grilled steaks. My Gma brought potato salad ( she makes it the best!) and my aunt brought a Greek and an another kind of salad. It was delicious. Better off i didn't have to cook
Tonight is cheese, chicken, veggie and rice casserole. I have a rotisserie to use up. I made the rice two days ago too thinking I was making it yesterday but we went to my dad's last minute.

DH made pizza from Trader Joe's dough. Pretty good. Tomorrow chickpea and potato curry with rice.
Today I also managed to get a pound of pasta cooked up and a quart of spaghetti sauce made for DD's lunches/after-school meals. The sauce was 2 cans of diced tomatoes (blended until smooth) cooked up with a halved, peeled onion and some chopped garlic plus a pat of butter, salt and pepper. Simple, but good.

|Ragana||I found a recipe online for coconut lime chicken and have made it twice in 2 weeks. Last night we had guests so I served it with rice, salad and broccoli.|

Using up leftovers day here. Turned corn on the cob and carnitas into a tortilla soup for lunch, and used up a package of fake crab and yesterday's mango salsa in a "ceviche." Tonight I will hopefully salvage a package of sausages (if they're not bad smelling already...it's their last day today) with either kale or onions and peppers (or both) and leftover rice. Bam. Clean fridge.
I've got half a jar of marinara sauce in the fridge, so I doctored/stretched it with ground Italian sausage, a bit of white wine and a little water. Serving over spaghetti.

Food Truck Friday! Horribly bad for us, but delish. Chicken and waffles and chicken and fries. I don't usually eat chicken, but these are so spicy and yummy!
Sno-cone truck for dessert. DH and I had an 'adult' - pina colada spiked with rum.

|apeydef||Oh and I also made chocolate chip cookies. I used whole wheat white flour. I've never done this before, I usually use unbleached flour when making cookies but they turned out good!|

|apeydef||Finally making my BLTs tonight before all my tomatoes go bad. I already had to throw some out and u had to put the rest in the fridge bc the fruit flies were everywhere. Cottage cheese and pineapple on the side.|

|Ragana||Smart plan! We very rarely get power outages, so while I had candles and flashlights, I didn't think to do stuff like throwing the meat from the fridge into the freezer when we had the outage last week. :-(|

|apeydef||I did not end up making the BLTs. We were out late and ended up ordering pizza and salad. Tonight we are supposed to get severe weather so if power goes out it's cold pizza for dinner lol. If power doesn't go out it's still leftover pizza. I didn't go out and get any groceries in case we lose power. Luckily the pizza we got yesterday was a huge pizza so it's enough for two days.|

I think BLTs were the one tomato dish I did NOT serve with all of our tomatoes. Duh!
Last night was a zucchini and carmelized onion gallette. Served with tomato salad. The pastry turned out really well...I usually don't take the time to do it right!

Tonight I wanted comfort food, and we're down to chicken and seafood in the freezer until payday so I opted for chicken and dumplings.
