Same here, honestly. Little Man lives on macaroni and cheese, yogurt, parmesan noodles, applesauce and any baked goods and sweets he can get his little hands on... will only begrudgingly eat fries, tots, and nuggets, and won't touch pizza and hot dogs with a ten foot pole... sigh. Getting a balanced diet into these kids is maybe the hardest part of parenting!

newmamalizzy I can't get my DD to eat things like tater tots and chicken nuggets I LOVE tater tots. I was even in a tater tot eating contest once in college. I can't understand how my DD could possibly not like them, but....nope. Not even with copious amounts of ketchup.

I freely admit to keeping tater tots in the freezer as a matter of course. :-) I've not made the tater tot casserole that's been making the rounds on the interwebs, but I do make breakfast casserole with it. Tater tots, cooked breakfast sausage and eggs, beaten with a little water, salt and pepper and voila - easy breakfast. Hash browns are such a pain in a dish like this, because they always end up soggy and insipid. The tots are the perfect solution, because you can bake them until nicely brown and crispy, then add the sausage and egg and bake until the egg is just set. And you can add anything too it - if I'm feeling fancy, I'll add scallions and sun dried tomatoes. Great for easy work breakfasts or brunch potlucks! Or frankly, for a grown up dinner a la Elizabeth David, with a salad and glass of red wine. :-)

DuchessTergie I made soup. Yippee for soup weather! Butternut squash, cannelini beans, kale, parmesan, chicken, garlic and rosemary. Easy and quick and good.

apeydef We ended up having leftovers. Hubby had leftover steak, green beans and baked potato. I made the kids some baked nuggets, peas and some tater tots. The only reason i have tater tots is bc my sis in law gave me a recipe for tater tot casserole and it sounds so good. Im going to modify it a tiny bit to make it more homemade. I don't like using canned foods. I try to make most things from scratch. Has anyone made tater tot casserole before?

Whew! We were worried there for a minute!

Tonight is finally the chicken's day - I put a rub on it & stuck it in the slow cooker. Will have it with salad, frozen potatoes, and veg DD will have the curry left over from the other day.

Hahaha it was basically a bottle of bottom shelf ditch gin - we still have a full bottle of the good stuff for the chef! :-)

kitchensqueen Husband went through the alcohol stash and found a forgotten bottle of gin - just about half a cup left, so I decided to cook with it. I'm making lemon-gin chicken, with sauteed onions, artichokes and olives. Maybe some herbed orzo on the side, because I have a lot of it in the pantry.

I'm a liar. I ended up making rice with tofu and peanut sauce. Still have the vegetable curry - maybe I'll have that for lunch tomorrow. Chicken has to go in the crockpot tomorrow! Haven't been to the Korean store yet, but itching to!

It was WAY better in tamale pie form! My DD even ate some. (Well....the cornbread part, anyway, but I think it's a success if she'll come near the main dish.) I cheated and used a Jiffy corn muffin mix, so it was super easy, too.

Yum! Why don't I ever think of this stuff? We eat a lot of chili- Not my favorite, especially the leftovers. This sounds like a yummy way to change it up!

kitchensqueen I have absolutely no idea what to make for dinner tonight... I do have a couple of pounds of potatoes I need to use up, so I may do a potato soup. Fall is here, so a nice homey soup is probably just the ticket.

Yes, simmer the halved onion in the sauce. Usually, we then take it out, but this time I left some in and blended the sauce again. This is a method we learned from an Italian-American friend. It's so good!

apeydef We went to my dad's teamster day and he grilled steaks. My Gma brought potato salad ( she makes it the best!) and my aunt brought a Greek and an another kind of salad. It was delicious. Better off i didn't have to cook
Tonight is cheese, chicken, veggie and rice casserole. I have a rotisserie to use up. I made the rice two days ago too thinking I was making it yesterday but we went to my dad's last minute.

newmamalizzy Ragana, do you mean that you just halve the onion but don't dice it up or anything? Do you remove it after cooking the sauce? That might be a good solution for us, since my DD hates bits of onion in the sauce. Also, I love swirling butter into my tomato sauce at the end!

Ragana DH made pizza from Trader Joe's dough. Pretty good. Tomorrow chickpea and potato curry with rice.

Today I also managed to get a pound of pasta cooked up and a quart of spaghetti sauce made for DD's lunches/after-school meals. The sauce was 2 cans of diced tomatoes (blended until smooth) cooked up with a halved, peeled onion and some chopped garlic plus a pat of butter, salt and pepper. Simple, but good.

Kate&Joey Very lazy here and the fridge is bare so got takeout. Stromboli, salad, and a glass of red. That's pretty much my perfect Sunday dinner.

Ragana I found a recipe online for coconut lime chicken and have made it twice in 2 weeks. Last night we had guests so I served it with rice, salad and broccoli.
