Confetti Winter Vegetable Medley

<p><em>Dr. Marianne Rothschild, a former midwife, has a holistic family practice near Frederick, Maryland. She and her husband, Gene McMahon, MAc, co-steward the Gaia Healing Center and live there with their daughter, Molly (15).</em></p>

1 pound purple potatoes
1 pound rutabagas
1 pound parsnips
1 pound yams
Olive oil
<p>Preheat oven to 350°F.</p><p>Peel potatoes, rutabagas, parsnips, and yams. Cut in 1/2-inch cubes, or in long strips about 1/2-inch thick, like "Greek fries." Coat lightly with olive oil and spread on oiled cookie sheet, one layer deep. Bake until done (20-30 minutes).</p>
