Creamy Watercress Dip

These easy, vegan bars are perfect for hiking or camping!

watercress spreadThis is a great high-protein dip or spread that incorporates mineral-rich watercress. I use whatever herbs happen to be plentiful in my garden to create this flavorful dip. It's delicious with raw vegetables, crackers or pita triangles. Use it as a sandwich spread too.

2 green onions, cut into pieces

1/2 cup packed watercress

2 tablespoons fresh herbs or 2 teaspoons dried

8 ounces tofu

1 tablespoon lemon juice

2 tablespoons mayonnaise

Sea salt and black pepper to taste

Place green onions, watercress, and herbs in food processor with metal blade. Pulse to coarsely chop. Add tofu, mayonnaise and lemon juice and puree mixture until smooth. Add salt and pepper to taste. Chill before serving if desired.

Yield: About 1 cup

Note: 8 ounces (1 cup) cottage cheese can be substituted for the tofu and lemon juice.
