Kimber's Kickin' Oats

An easy, wonderful hot breakfast and while it bakes you can attend to the other morning tasks like packing lunch, (and maybe brushing your teeth) before it's time to boogie off into the day.

Preheat oven to 350.
Bring to a boil 2 cups of all natural peach juice ( I like Mountain Sun or After The Fall juices).
Stir in 1 cup whole oats (the real deal, from the bulk bin at the health food store) and cook for 1 minute, stirring.
Pour into a buttered loaf pan or small cassarole dish, and cover.
Bake 20-30 mins. till liquid is absorbed.
Dot with butter and sprinkle with brown sugar, and broil a few minutes till all that yumminess is bubbly on top.
Great as is or with a dollop of yogurt.
You can add nuts and/or dried fruits also.
Cider, pear juice and apple raspberry juice are fun to try too.
