Does Anyone Have this Recipe: Fruity Brown Rice Salad Recipe

I had the recipe Fruity Brown Rice Salad from mothering.com bookmarked and now it must have been moved. The link just takes me to the main mothering page. I've searched the site and can't find it!

I know some of the ingredients are brown rice, yogurt, grapes. I think there are a couple of other things too.

Does anyone have this and wouldn't mind sharing. I loved making this for potlucks.

  • Brown rice 1 cup, cooked.
  • Red pepper, seeded and diced.
  • Whole kernel sweetcorn 1 x 420g can, drained.
  • Currants or raisins 3 tablespoons.
  • Pineapple pieces 1 x 400g can in natural juice (save juice for dressing).
  • Spring onions 4, thinly sliced.
  • Roasted peanuts ½ cup, roughly chopped.
  • Dressing:
    • Juice from canned pineapple ⅓ cup.
    • Soya sauce 1 tablespoon.
    • Canola oil 1 tablespoon.
    • Crushed garlic 1 teaspoon.
    • Grated root ginger 1 teaspoon.
    • Salt and pepper to taste.

Preparation time: 15 minutes

Method
  • Mix all salad ingredients together in a bowl.
  • Mix dressing ingredients together in a jar and shake well; stir through salad just prior to serving.
Serves 8 as side salad
