I'm very proud of myself! Up until now, I've only really made good chicken soup (and how hard is that really?). But today I finally made my mushroom barley and MAN is it good! I'm working at home today and I keep sneaking upstairs for more tastes
I had posted on here for a recipe but no one had anything so I'm throwing this back out there in case anyone else is looking. It's an aggregation of several recipes I contemplated, and this is exactly how I made it.
1lbbaby bella mushrooms (AKA cremini, thanks VikingKvinna!)
1/4 cup unsalted butter
1 medium onion, chopped
4 cups chicken broth
4 cups beef broth
2 medium white potatoes, diced small
1/2 cup chopped celery(I skipped this because I didn't have, but will use next time)
1 teaspoon minced garlic
2 large carrots, peeled and chopped
1 cup pearl barley
3 bay leaves
salt and pepper
Slice mushrooms and set aside.
Melt butter in heavy large soup pot over medium heat (do not let butter brown)
Add onion, carrrots, celery, and garlic.
Saute until tender, about 8 minutes, stirring constantly.
Add mushrooms and cook 2 minutes.
Add all 8 cups of broth, barley, potato, and bay leaves.
Bring to boil over high heat, reduce to low heat, cover and simmer about 35 minutes.
Season to taste with salt and pepper.
Don't forget to discard bay leaves.
I wasn't going to do this part, but ended up doing it for my DD, and it turned out to be really good. I stirred a little dollop of low fat sour cream into each bowl (and a generous helping of Tabasco sauce into mine
), and served it up with sweet whole wheat potato bread (would also be SOOO good with challah).
