Don't have much to say about the other stuff, but as for the cut of steak...if it's just for you, I say go for a ribeye. Nice and tender and flavorful and doesn't need excessive trimming. I cook mine in a really hot cast iron skillet with no oil in order to really sear the outside shut and get a nice crispy edge.
