For the past few days I've been craving steak. I don’t normally like beef at all, but I guess my taste is slowly changing

Though I'm a very good cook, I never got into red meat. I would just go out for it and there are a few places I can get free-range beef, but I rather make it at home first.

For those of you who only eat non-hormonal meat, would free-range or organic, or both be the best way to go? Which cut is best? I only need to just buy enough for one serving for me, so I don’t need to go to a farm and buy a whole cow. And how do you cook/grill it? I have a LeCruset (sp) grill pan and quite a few well seasoned cast iron skillets. Would the grill pan be best? TIA!

Don't have much to say about the other stuff, but as for the cut of steak...if it's just for you, I say go for a ribeye. Nice and tender and flavorful and doesn't need excessive trimming. I cook mine in a really hot cast iron skillet with no oil in order to really sear the outside shut and get a nice crispy edge.

I like flat iron steak. I score it on both sides, season with salt and pepper, then broil for 6-8 minutes/side, until it's done to my liking that day. Cut on an angle against the grain, enjoy with butter and worcestershire.

Chasing DS since April 2007 and pumping for DD March 2013.
