I used a pound of dried coconut to make coconut milk, and now I have a ton of rehydrated coconut...what can I do with it?

Add it to a recipe, feed it to the birds, put it in the compost. It won't have much of a taste after you juiced it, but I usually add it to my carrob fudge, yummmm

OK, this is how I did it. You can either buy the coconut and crack it open your self, scrape out the meat and such(that is the hard way, btw) or just buy the coconut flakes.

Take the meat and soak it in warm water for a bit, then put that-water and coconut- into a processor. Take the pulp and strain it. I'm wicked picky and squeezed the bejesus out of the pulp in my hands to really get out all the "milk". You can do this again with some more water to get all of what you can out of the coconut. Easier than you think

Coconut milk does not last long so don't make too much at one time, made that horrible mistake before, yuck!!!
