Ds is still nursing every 2-3 hours but he's starting to get more interested in self-feeding solids (not interested at all in the pureed stuff). Are beets, chickpeas and almond butter ok? Also, (we're lacto-vegetarians) what kind of organic, full fat cheese should I start him off with? Mild cheddar?

Unless they're naked and eating over a disposable tarp, I wouldn't feed a baby beets. And even in the above circumstances, I would be hesitant. I know they're nutritious, but the stains are a beast.

Chickpeas (squished a bit) are excellent, though! :

my dd loves all those things. also she has always loved just about all cheeses, but we did start out with milder ones in small quantities to make sure the dairy wasnt going to disagree. at first it did and for awhile i gave her that activia cheddar - it supposed to help with digestion and now a few months later she is fine all cheese and yogurt.

My little one eats whatever we have. I did not worry about bland things. She loves spicey food. I figure if kids in India have curry as their first food my daughter can have whatever we have. She loves beets btw. We just take her shirt off and let her have at. It has not been a mess at all.
We mostly self feed. I say mostly because if we go out sometimes there is nothing for her to eat. So for those life unplanned events I have organic baby food for her. She just drinks it through a straw. I also always have in the tank for her rice crackers. She cannot have any gluten whatsoever.

All sound like good choices. I agree with the op about spices. My ds loves moroccan veggie stew with chickpeas, yams, carrots, tomatoes, lentils, etc. He's 11 months. He also likes tofu cubes and kidney beans. I was wondering about the almond butter myself. I've been using pumpkin seed butter as it's very high in iron.

Just wanted to add that ds2 has had beets many times and likes them. Get the yellow kind if you're worried about the mess, but even the red ones aren't TOO bad. Removing the shirt is a good idea though!
