I'm looking forward to the Eggs on Baby Spinach with Peas and Brie and the Friggin Fig Breakfast Sandwich myself.

anyhow thanks for linking to this! YUM! I LOVE LOVE LOVE eggs.

that said, I was disappointed b/c I thought the sight was going to give me tips on how to actually crack the eggs... I have been making eggs all of my life. I make them every single day and I still cannot managed to crack and eggs with out getting eggshells mixed in. UGH!!!

Crack them on a flat surface, and they should crack without shattering the edge. If you crack them on the edge of a bowl or something similiar, shards can be driven into the white making it more difficult to break shell-free.

I think I am doomed to have eggshells in my eggs forever!

(But I wil try what you said anyhow)

We just had the pesto ham and egg biscuit for breakfast, and it was FABULOUS! We actually had to go back for seconds. Definitely looking forward to trying more of those, but this one is absolutely going to become a regular weekend breakfast around here - especially during basil season.

Yep, you two have me totally confused.
we just discovered one another. I kept finding posts and thinking "I REALLY don't remember replying to this thread... wth?"

The *only* way I can crack eggs & not get shell bits in my egg is to crack them on my forehead. Right in the middle, just once, nice & firm. At first my head would get sore, but now I'm used to it.

I made the eggs in purgatory with the leftover sauce from chicken cacciatore + a can of crushed tomatoes and some rosemary. SO good.

Crack them with a sharp flick-of-the-wrist motion. Make sure that you aren't pushing the egg down onto the bowl or counter corner. The flick is what makes it crack open nicely.

As the PP said, it's also easier on a corner instead of a rounded bowl edge.
