So we've been going through quite a bit of potatoes as of late since they areso cheap and I'm wanting to graduate to a 15lb bag...

Here's what I've been doing with them now:

-breakfast potates(ds FINALLY started eating these)
-potato latkes-not turning out fantastic, I'm thinking I'm needing to bake them
-chickpea potato curry
-oven fries for ds
-beany shepards pie(dh HATES it)

I'm going to try homemade perogies since I have a bread maker to mix dough

Give me your potato recipes pls

Dang, I was gonna say curry.


We eat a lot of herb and garlic roasted potatoes or fried, like homestyle fries when we eat potatoes.

Umm, soup? Like veggie soup or broccoli and potato soup. I make a lot of that.

Simple baked potatoes- coat in oil, roll in coarse salt, pepper and italian seasoning; bake. I like these with just a little vegan butter. Good enough to eat with nothing else!

Sorry, since you already put curry, I don't have much else. :p

I like to clean and cut up the 'tatoes, throw in the oven at 350 for an hour, naked. I don't even turn 'em. Then I toss with canola oil and rosemary and salt. Delicious hot or cold.

We make potato and bean burritos on sprouted tortillas! It is heaven! The kids go crazy over these.

Chop potatos a little bigger than a pinto bean. Fry with a little coconut oil and salt/pepper until done and add the beans until heated. Put in a tortilla with your favorite toppings! Cheese, salsa etc.

Baked potato bar: Bake a bunch of potatoes and then put out bowls of black beans,corn, salsa, broccoli, soy cheese,marinated tofu, stir fried veggies.... you can really put anything on a baked potato!

Potatofritters?

Grate the skinless potatoes, and put them in a bowl. Add the spices you like, a very finely chopped onion (or 2-3 springonions) and finely chopped bell pepper. Add a handfull or two of breadcrumbs. Continue with egg-replacer equalent of 2-3 eggs. Stir it all together.

Heat a skillet, and pour a few tablespoons of oil into it. Use a tablespoon, and place the "batter" in the skillet. You can put 5-6-7 small fritters in the skillet at once. Fry them for 2-3 minutes on each side. Serve when they are crispy and hot, with the dipping sauce of your choice.


You can use other veggies instead of the bell pepper, if you like. Corn is also good.
