i'm sorry, i'm sure this has been posted before ...<br>
anyone have any good recipes for first bday cake/treat? i've avoided refined sugars for ds and plan on doing so as long as possible ....<br>
any ideas/recipes would be super and appreciated!<br>

I made this one for DS (and made a sugary cake for everyone else. This cake was not that tasty. I did frost it in a low sugar cream cheese frosting and DS gobbled the whole thing!).<br><br>
I don't have the source, but it's not mine. If anyone knows, they can post it.<br><br>

BANANA CAKE<br><br>
2/3 c. banana, mashed<br>
1/2 c. butter, softened<br>
3 lg. eggs<br>
3/4 c. water<br>
2 c. unbleached flour<br>
2 tsp. baking powder<br>
1 tsp. baking soda<br>
1 tsp. cinnamon<br>
Optional: 1 c. chopped walnuts OR 1/2 c. chopped walnuts & 1/2 c. raisins<br><br>
Grease and flour a 9 x 13 inch pan. Beat together mashed banana and soft butter until creamy. Beat in water. In a separate bowl, beat eggs until very foamy. Beat into mixture. Blend in flour, baking powder, baking soda and cinnamon. Beat until smooth. Stir in walnuts or walnuts and raisins, if desired. Spread batter evenly in pan. Bake at 350 degrees for 20 minutes or until a knife inserted comes out clean. Cool. Serves 8-10.

For DS's first bday, I made a vegan cake w/ special icing. It was pretty tasty (even DH liked it!), but DS HATED IT and wanted nothing to do with cake.<br>
For DS's second b-day, I just assembled fruits I knew he loved into the shape of a cake. I stacked 2 watermelon circles (bottom one with the rind on, carved "I'm 2!" into the side), put down a layer of banana slices, then a small watermelon circle, then more banana slices, then bluberries and grapes on the top, ledges, and bottom edge, and finally arranged whole bananas and tangerines around the base. We stuck two candles (t.v. antenna-style) in one banana slice on the ledge just above the part of the rind with the wording on it. It turned out very cute, DS *loved* it & ate and ate and ate -- even to the point that he shunned away presents for another go at his "cake!"<br><br>

We recently went to a 1st bday party - the mom had made the most DELICIOUS cupcakes from Barefoot Contessa. They had shredded coconut, and were just heavenly!
