I modified this one to make it TF--I got it off a website originially<br><b>Zuppa Toscana</b> (like the soup they serve at Olive Garden, only better!)<br><br>
* 1 lb ground italian sausage (i made my own with pastured ground pork & spices)<br>
*1 1/2 tsp crushed red pepper<br>
*1 lg diced onion (white or yellow)<br>
* A few strips of bacon, cut up into small pieces<br>
* 2 tsp pureed or smushed garlic<br>
*7-10c chicken stock (depending on how thick you want it)<br>
*1 cup heavy cream (i used raw cream)<br>
*1lb sliced russet or red potatoes (or as many as you want until it looks right)<br>
*1/4 - 1/2 bunch of kale (i ripped all the side leafy parts off and used those)<br><br>
Saute sausage and red pepper in the bottom of you soup pot. Place in another bowl when done.<br><br>
Saute onions, garlic and bacon in the soup pot, until done (onions are soft, bacon is kinda crunchy). Add the chicken stock and bring to a boil, then reduce heat to about medium.<br><br>
Add potatoes, and cook until tender (about 30 minutes). Stir in kale, sausage and cream, and cook until heated through and kale is tender, but not too soft (not very long!!)<br><br>
Serve with shredded cheese on top! (i used raw med. cheddar cheese, but other cheeses would probably taste good too)<br><br><b>Chicken Salad</b><br><br>
This recipe I made up last night...its pretty simple, but good! Not very exact though, sorry <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/winky.gif" style="border:0px solid;" title="Wink"><br><br>
Chicken, shredded up in to small pieces<br>
Mix in a medium amount of mayo, enough to make it sort of creamy.<br>
Mix in a small bit of dijon mustard, and apple cider vinegar (or lemon juice, or both)<br>
Mix in a blob of strained yogurt, enough to make it a good creamy consistency.<br>
Add salt and pepper to taste. Serve however you like (on buttered toasted sourdough would be goooood)<br>
It is SO YUMMY! Even my kind of picky fiancee said it was the best chicken salad he'd ever had! I did use pastured chicken, so maybe that was part of it...<img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/orngbiggrin.gif" style="border:0px solid;" title="orange big grin"><br><br>

That soup sounds so good! I think I have all the stuff and I was wondering what to do with the kale I just picked from the garden<img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/orngbiggrin.gif" style="border:0px solid;" title="orange big grin">.
