I just made it for the first time a few weeks ago--I didn't like it plain, but it was OK mixed with millet as a breakfast cereal. I cooked mine in the crockpot overnight.

I haven't used whole amaranth, but I tried using amaranth flour recently and didn't really like the taste. And just a warning that you can't use 100% amaranth flour in pancakes (and I read other baked goods). It apparently has a lot of moisture so you will end up with pudding (took me 2 batches of pancakes before I researched it and figured this out!). It is supposed to work well in combination with other flours though.

I use amaranth as one of DD's hot cereals in the morning. We rotate between that, quinoa flakes and GF oatmeal. I just boil it in water the same as with the oats and quinoa - it soaks all the water during cooking. We then just use it for hot cereal and mix various things into it.
